Okay, let's talk about Gaia. As a member of the Stradom House Club and a local resident, I eat here almost every day, or let's say several times a week. And I've been doing so for a good two months now. So it's time for my first major interim conclusion.
Gaia could be the perfect restaurant. So let's start with the positives! The food is really excellent. I've never had a bad meal here. My biggest praise therefore goes to the kitchen! The atmosphere is also nice. It doesn't feel like a classic hotel restaurant, yet it fits in very well. It is both elegant and informal, which makes it a great place to spend time. The staff are also friendly and strive to maintain etiquette. However, this is also where I see the sticking point.
In my opinion, the most important factor that distinguishes a good restaurant from a very good or even world-class restaurant is the feeling I have as a guest during and after my visit. Was it a perfect evening or not? Don't get me wrong, this is high-level criticism. But in the end, these are the things that bother me the most.
Although I go there almost every day, I feel that my personal experience depends too much on the staff on duty at the time. Here are just a few examples that I have noticed over time:
As a member, you usually get a 10% discount. At first, I always mentioned this, but at some point I stopped, at least with the staff who already knew me. In most cases, this is also positive and simplifies the tedious task of saying “I am a member” – which is basically just annoying and unpleasant. The staff then runs back and forth, comes back again to ask for your name to check it against a list. Then you have to sign something. All in all, it's just annoying! The payment process sometimes takes three times as long as it should. The newer the staff, the longer it takes – which I fully understand, of course. If, for example, members had a card or wristband, it would make the process much easier (just a tip on the side). Added to this is my latest discovery: staff who you see there almost every day suddenly forget to apply the discount. When confronted with this, they deny responsibility and blame you for not saying anything. In my opinion, that's not acceptable. It also seems that this cannot be changed because it is already recorded in the “system.” This makes you feel a little taken for a ride.
Same place, different example: the lunch combo is a great concept in itself: you get either 2 or 3 dishes for a very reasonable price compared to the regular menu. However, if you eat there several times a week or almost every day, it's understandable that you might want to add a little variety now and then. For example, by swapping certain dishes because you already know them inside out. If you want to swap the salad from the lunch combo for another salad from the regular menu that costs exactly the same, this is sometimes refused. The regular staff ask on your behalf, and sometimes it works, but sometimes it doesn't. I would therefore like to defend the majority of the staff, who are really more than accommodating, and I actually believe that it is more of a management problem, or a problem with the shift supervisors. Arguments such as the portion size in the lunch combo being different from the standard menu, even though the dishes are the same, simply don't work for me. I have now had every dish from the lunch combo there in the evening as well and I know that the portions are the same size! I really don't have a problem paying more if I have to. What I can't stand, however, is being made a fool of.
Based on all my experiences at Gaia (I must have visited around 50 times by now), I can say that it is a very solid restaurant. However, the service leaves something to be desired here and there. The cuisine is one of the best in Krakow, though. My rating is...
