You need to hire a real barista, that knows how to set up a grinder. The coffee beans suffer oxidation from the opening time until middle of the day and the grinder set up needs constant adjusts to follow this change and keep balanced… I waited 20 min on line to get a good coffee and my coffee was completely umbalanced, it was too bitter and the sad thing is that a real barista would know that it was purely because the grinder was not set up properly, when i complained with the girl she just said something like “it is what it is” and gave me her shoulders. I tried to explain what she needed to do and she just didn’t.
