Acompanhamos o trabalho da chef há quase 20 anos, em diversos palcos e é devido o destaque, o protagonismo e o reconhecimento atingido na que é hoje o principal rosto feminino da nova gastronomia/restauração portuguesa. A exposição mediática, nomeadamente na TV, contribui decisivamente para a elevada notoriedade conseguida pela chef. Este sucesso não a impediu de continuar a ser a mesma pessoa, com os mesmos objectivos de rigor e qualidade que sempre a pautaram. Ao contrário do que acontece na larga maioria dos outros estrelados visitados, na Marlene a maioria dos clientes são portugueses e a idade média é inferior ao normal. Numa quinta-feira ver um restaurante cheio e o barulho de fundo ser em português é uma óptima sensação e tira a razão a quem diz que os estrelados são só para os estrangeiros. E pelo que dizem é o local, em Lisboa, onde há mais iniciações ao fine dining. Dupla responsabilidade para a chef que a supera com brilhantismo. O conceito e o espaço estão totalmente adaptados a este novo público que é fundamental cativar. Como exemplo podemos apontar a música ambiente (bastante mais alta que o normal), as fardas e o serviço (informal e “leve”), a opção entre mesa ou balcão (ambos minimalistas), a luz ambiente (reduzida), as opções gastronómicas, bem como duas opções de menu (9 momentos por 150€ ou 12 momentos por 180€). Sabores fortes, combinações pouco habituais, introdução de técnicas e especiarias de outras paragens, a utilização de proteínas “nobres”(caviar, lavagante, atum, waygu entre outras), tudo em “doses generosas” finalizando com uma caixa/cofrett com os petit fours (para mais tarde recordar) são uma receita de sucesso. Carta de vinhos com boas opções a preços correctos. Pedimos uma sugestão que acertou em pleno no pretendido. Taxa de rolha 45€ que não nos foi cobrada. A exposição mediática, nomeadamente na TV, contribui decisivamente para a elevada notoriedade conseguida pela chef. Este sucesso não a impediu de continuar a ser a mesma pessoa, com os mesmos objectivos de rigor e qualidade que sempre a pautaram. Numa quinta-feira ver um restaurante cheio e o barulho de fundo ser em português é uma óptima sensação e tira a razão a quem diz que os estrelados são só para os estrangeiros. E pelo que dizem é o local, em Lisboa, onde há mais iniciações ao fine dining. Dupla responsabilidade para a chef que a supera com brilhantismo. O conceito e o espaço estão totalmente adaptados a este novo público que é fundamental cativar. Como exemplo podemos apontar a música ambiente (bastante mais alta que o normal), as fardas e o serviço (informal e “leve”), a opção entre mesa ou balcão (ambos minimalistas), a luz ambiente (reduzida), as opções gastronómicas, bem como duas opções de menu (9 momentos por 150€ ou 12 momentos por 180€). Sabores fortes, combinações pouco habituais, introdução de técnicas e especiarias de outras paragens, a utilização de proteínas “nobres”(caviar, lavagante, atum, waygu entre outras), tudo em “doses generosas” finalizando com uma caixa/cofrett com os petit fours (para mais tarde recordar) são uma receita de sucesso. Carta de vinhos com boas opções a preços correctos. Pedimos uma sugestão que acertou em pleno no pretendido. Taxa de rolha 45€ que não nos foi cobrada.
