MyeonSeoul isn’t just a name — it’s clearly one of the standout gems from your trip to Seoul. Recommended by the Michelin Guide, it won you over with its minimal yet modern atmosphere and its almost obsessive dedication to ingredient quality.
From what you described, it perfectly embodies the philosophy of high-end Korean dining: • Refined gyoza, perfectly balanced between thin, delicate wrappers and flavorful filling. • Melt-in-your-mouth pork, with that delicious, rich fat — likely bossam or suyuk, gently boiled or steamed to preserve texture and flavor, accented with a touch of the sea. • Signature noodles infused with perilla oil cold-pressed at 45 °C, perilla seeds, and shiitake mushrooms — a combination that delivers nutty, earthy notes. • Ultra-low hydration noodles — a rare technique that gives a firm, chewy texture and concentrated flavor, made from a blend of organic whole wheat from Turkey and France, Baekgang wheat from Sacheon (Gyeongnam), plus organic mung beans and soybeans roasted in-house.

Read moreDefinitely worth the visit!! A genuine surprise to enjoy. It's easy to take for granted simple homestyle food & think it can't be improved upon or elevated - but Myeon does just that!!
At first we were hesitant to order the perilla oil noodles because it was so toppings limited. So glad we got them! Nutty, cold noodles that give warmth from the fatty taste that the oil gives off. Full of aroma, and great bite from the noodles themselves.
The wide noodles were so good - they implied pasta but were rich in texture and true to Korean flavors.
The pork is a must - it's fatty, bouncy, soft, melt in your mouth and just a delight to eat.
I'm normally not mandu keen - these changed my mind! The skin was CRAZY soft, yet had enough elasticity to not break apart after biting.
All around great meal, we were seated quickly & service was just as quick.
(P.S. Westerners - familiarize yourself with the Korean palate before eating here! Things like seollangtang are intended to be bland and not...
Read moreYun Seoul was fully booked so we came to try Chef Kim (White chef specialised on Korean fermentation) noodle shop instead. It is a small semi-self-service ordering noodle shop. Nice decor and location, we went on non-peak hours without the wait.
We ordered the original, mix fermented noodles and braised pork belly (there aren’t many options as it’s a specialty place). Surprisingly everything was very tasty and has taste different other noodles shop, especially the original flavour noodles that looked quite plain, the pork belly with tiny salted shrimps was good too. Overall Chef Kim didn’t disappoint. Recommend to try, enjoy!
