This is a Chinese "hotpot" (also known as a Steamboat) which consists of a large partitioned metal saucepan with stock bubbling away in each compartment, that simmers away on the table such that you order various items to cook in there, from vegetables to meat and fish, dipping them in as and when you wish to eat (kinda like a fondue pot but). This is a popular method out in the far east, and pretty enjoyable.
It's not obvious from the menu but the "A or B" choice is a small or large pot, the former being a smaller 2-section pot intended for individuals and the latter being a larger square one with 2 or 4 compartments that sits in the table centre for others to share (it may have helped if the menu depicted the Bs as square).
Your choice of pot actually determines where you sit, as tables are designed for heating the smaller or later pots. We got a Type B (large pot) with 4 compartments, having a chilli stock in one of them - which was actually quite spicy, despite us only picking the 2 (out of 3) chillies in strength. Given there's additional chillies on a condiment counter to the side, perhaps we should have just opted for the one then strengthened it up as we saw fit! The other compartments contained pork ribs, veg and chicken base to give some variety, and flavoured the supplied dishes very nicely.
The additional dishes we ordered varied from fish balls, thinly-sliced chicken and pork, lots of different veg along with some noodles and tofu. We originally ordered just two dishes per head then ended up requesting more as the evening wore on.
I initially began by cooking just the one or two ingredients, then found it was easier to use the other cutlery (spoons, baskets etc) to cook specific items in or just drop an entire plate in then wait for the lot to be done.
