The service was good, plates presentation is nice, but the preparation and the mix of flavors were of very poor quality: the fish was half raw and cold (should be "a la plancha"), the squid was also undercooked, the ceviche was so-so, the taste was not very good, as if the ingredients were not very fresh (even if we finished the plates, because we were super hungry, but regretted it for half a day that we done it). Good thing nobody got sick... Well, to recap: it was a BIG disappointment. I would expect this quality of food at a cheap roadside cafe, but not at the Ritz Mandarin Oriental where you pay a high price. I got a table by the fountain and the rest went like a dream.I had the fried Andalusian squid with aioli sauce and Tuna tartar with avocado mousse and wakame algae. They were both almost perfect. I accompanied the food with a cold Albarino, the best Spanish white wine. Service was excellent, watching the team deliver their service was like enjoying a ballet performance. All of them were impeccable. Although the food and the wine were of top quality, I think what made the difference was the quality of service. The Ritz of Madrid have reached an impressive height here. Value of money for this level of food and service...
