Amazing Roman pizza (“pinsa”) made by charming and friendly Maximilian (Max). I learned that pinsa is a specific style of pizza from Rome.

I could tell that the food Max prepares is a labor of love. He explained he brought the freshest ingredients from Italy, including the tomatoes. The dough is made from a mixture of several flours with a thick crust and from what I could tell, a better texture than other pizzas I’ve had. The dough seemed to have higher protein and lower glycemic index, if you care about those things like I do. It had a nice crust but wasn’t heavy.

We ordered a rocket salad with creamy burrata, cherry tomatoes bursting with flavor, and pesto - all fresh and delicious. The pinsa was outstanding. We ordered the guanciale pinsa (kind of like bacon) with sun dried tomatoes and zucchini and the tartufo pinsa: This is the first time I’ve had fresh sun dried tomatoes. Everything was muy delicioso! The pinsa / pizza is some of the best pizza I’ve ever had. The tartufo pizza had sliced truffles, not just the oil, and incredible cheese. The tartufo pizza was an absolute feast of flavors.

So happy Max decided to come to Madrid and share his pinsa expertise. He converted me to pinsa over pizza.

If you blink you’ll miss it. This place is situated halfway down the steps as you exit Plaza Mayor on the southwest side. Literally, the restaurant is tiny with a small kitchen, two bathrooms, and two seating areas. However, what they lack in space they make up for in service, food, and feel.

The service is kind, friendly, and prompt. Our waiter took care to ensure we felt at home the entire time. The restaurant has the secluded feel of being tucked away from the world, which I liked. The food is top notch, delicious beyond delicious! We enjoyed a couple of glasses of full bodied red wine, a scrumptious pesto pizza, and a delicious chocolate soufflé. My only regret is that I couldn’t eat more. The spirit was willing but the stomach was weak.

Overall, this might be my new favorite pizza joint. The best part of all is although it’s close to Plaza Mayor (tourist area), it’s not postured as a tourist trap. It’s the real...

I recently had the pleasure of experiencing one of the best pizzas of my life at this fantastic pizza place. Their off-menu specials are a hidden gem, and the homemade pesto pizza was an absolute delight! The flavors were perfectly balanced, and each bite felt like a culinary masterpiece. What truly elevated the experience was the warm hospitality provided by Fabio, a wonderful host who brought the authentic warmth and hospitality of Italy to the table. Excelente pizza! Ingredientes muito frescos e de qualidade, servidos de forma muito simples e com uma pegada caseira. O ambiente é rústico e initimista, pouco confortável mas não interfere na qualidade da experiência pois a pizza é excelente. Provamos cerveja, e o vinho branco e tinto de taça da casa. Vinhos muito legais, a cerva não deixou a desejar. Servida na temperatura correta.
