Having living in California and been to many renown sushi restaurants around the world, I was surprised by the sushi here. You never thought you find this quality of sushi on an island in a very rural town of Palma. Frankly, if this place is in my neighborhood, it'd have been my go to sushi place.
Understanding, taste is a subjective thing but if you want some sushi, come try this place. You may be pleasantly surprised.
The sushi leans toward more sweetness than others, it's a little bit moist as well. However, they did a great job with the sushi rice. Some may prefer more vinegar then sweetness but to me, it tastes great.
The ingredients are very fresh, the unagi was really good. I think it has to do with it's farm raised in Spain compared to those in USA and many Asian countries (besides Japan and may even some Japanese sushi places) uses Chinese or Vietnamese farm raised. You can tell the difference from those with this Spain raised ones. The Japanese one is probably one of the best. The Chinese farmed ones not as good.
As for the other fishes are all from Europe. Fresh and taste really good. The octopus was fresh as expected and the tuna and shrimp was excellent.
The only one I'm not sure was one of the roll which has ginger in it. It overwhelmed all the other flavors (that's why I forgot what it was). However, it could be a local favorite since different region loves different combinations.

Visiting a new sushi restaurant, I am careful as I don’t like fishy/cheap fish. Accordingly, I started off with two vegan Sushi rolls, the Bio Mexican and Spicy Tofu. The service was fast and I was surprised at the clean and minimalistic presentation. After having tried the sushi I soon regretted not having taken a photo for a google review. The Sushi were a great composition had a great taste and the rice as a basic agreed was very good.
At the same time the service was truly impeccable and attentive.
As a small treat at the end, I ask Manuel for his recommendation, and he even offered half a roll to round up the dinner. You can see the salmon sushi on the photo (which this time I was sure to take). The salmon was great. Very tender and fresh and absolutely no fishy taste. Manuel told me that they buy the fish fresh each day and use it up by the evening. I have no doubt.
We’re back on Sunday and this time Manuel can surprise me with their signature Sushi.
Last but not least, we eat gluten free. And it was absolutely no problem. Gluten free soy sauce was at hand and gluten free beer available.

The types of fish were limited compared to what you might expect at a sushi restaurant in the US, but that is simply a sign that they only work with the highest quality fishes available.
