He was patient with our questions, enthusiastically detailed the sourcing and cooking processes, and gave thoughtful recommendations based on our personal preferences. With his help, we managed to navigate the tantalizing options, and his suggestions were spot on.
We indulged in the longest dry-aged steak cooked to absolute perfection. The steak was a masterpiece, oozing with rich, beefy flavor that was amplified by the dry aging process. All the dishes were simply presented, showcasing the ingredients and paired with a simple side salad and potatoes, beautifully seasoned with nothing else needed to distract from the beautiful meat.
Francesco’s wine pairing suggestion was equally impressive enhancing our dining experience, with the wine adding depth to the flavors of the food.
Our lunch concluded with Francesco presenting a delectable dessert - the Chocolate brownie, which was, yet again, a triumph and a perfect end to a splendid meal, as we savored every bite, just like we did every moment at the Meat Market.

We booked on The Fork and despite arriving a few minutes early we were greeted very warmly. The first impression is exceptional. The waitress, but also Francesco and Giulio Cesare were of an attention that is hard to find. Hearing Francesco tell the story of the restaurant, and the way they select the meat and cook it is something I would ALWAYS like to encounter when I enter a restaurant. Let's get down to business: croquettes and a selection of cold cuts as starters. Delicious! As a second course we had the queen of the restaurant: meat. Well advised by Francesco, who does not force you but leaves you the ultimate choice of what you want to eat, we opted for a Fassona, french rack cut (115€ per kilo). I have lived many years in Tuscany, where meat is the essence of life, but believe me, I have never eaten a piece of meat so good and above all cooked properly. To drink a Roda riserva (around 60€) and to close a dessert to celebrate my birthday. 2 espressos of the highest quality to round off a 5-star experience. Read moreMy wife took me out to a special lunch for my birthday in early February here. Service wise, we had some of the best service in Valencia with Francesco taking care of us all throughout the lunch and making it a special meal. The way the restaurant works is that you can order from the menu or you can pick from a cart with several cuts of meat similar to some steakhouses back in the US. We ended up picking the solomillo wagu from the menu and the vaca mestiza from the cart. We also ordered the carpaccio de vaca vieja and the ensalada tartar.
The atmosphere was calm and not too noisy but not too quiet, perfect for a nice steak meal.
Five stars for service and atmosphere. I took a point off for food because one of the steaks on the hot plate was a tad under done and the hot plate was not hot enough to cook it a bit more. Normally this would be fine but since they did not ask how we liked the steak, we assumed they were the type of restaurant that wanted you to trust them. In addition, I gave 5 stars for service because Francesco was amazing and probably deserves more than 5 stars, but the other waiter/sommelier forgot to bring out my wine after I ordered it and I had to remind them about it after some time. Again normally not a big deal but given the market and price point they wish to compete in, it is worth pointing out as helpful feedback.
