ZERO STARS, NEVER BACK AGAIN. I’m appalled by the terrible service attitude and even more appalled by the extremely inefficient cook and his team. Let me elaborate: 1) admittedly, the hardest working person is oldest Uncle who prepares and cooks the dishes BUT he works hard but quite very inefficiently. He is literally cutting the eels, frying the eels, cooking and frying the noodles (all separate steps) by himself. The assistants around = 0 labor strength (they take orders then leave to smoke and skive while waiting the main Uncle to cook, others will on and off wipe the tables - yeah that’s about it, not very useful employees). Important point is, the main Uncle prepares 4-5 portions of eel noodles ONLY at every one time. So literally after every cycle, he needs to repeat the Long arduous steps - cutting the eels (which in my opinion can be done by someone) > frying eals > frying noodles. From my 100min observation that is one big flaw in the system which unfortunately leads to a Long queue that does not really move, meaning they don’t actually have a Long queue because of just the good food per say but rather because of the fact that they are damn slow. 2) my other query and complaint will be on the time taken to serve the food to customers - deliveries vs customers who have queued for a Long time (both dine in and take seats). Another major flaw in the system here. They accept delivery orders and spend lots of time preparing those orders while leaving customers at a handful of dine in and takeaway customers to wait for like forever (mind you, i was still in line then and I witnessed them waiting for a good 30-40mins sitting there watching the ppl packing delivery orders the whole time and not getting their food). It’s obvious they were in a serious backlog with their orders but they don’t seem to give a damn. Service is obviously not even anywhere close to make up for that. I love Tainan but I’m not going to EVER return to this place. It’s not getting a second chance from me. No thanks.

⭐ Highly recommend!! If you like eel than this noodle dish will send you to heaven! The taste is a well balanced mix between smokey, salty, sweet and spicy. But don't worry it's not so spicy that your mouth is on fire, just a welcoming kick of flavor. We ordered 2 bowls of dry eel noodle which was 130TWD each. You get a lot of eel so this price was super reasonable! Sure, the bowls are a bit on the smaller side but if you're not satisfied, just order another one. We came to the shop on a Tuesday evening around 5:30PM there was a small que and we waited for about 15-20 min. It was interesting to see how the boss was making the dish as he's very skilled and has his process down! I've read a few reviews were people comment about the environment of the shop, but if you don't like it then don't eat there. It didn't bother me at all, as I believe it adds to the charm and the experience of eating here.

This is one of the best things I've eaten in Taiwan ! The fresh eel is sliced and stir fried right before your eyes...鑊氣足夠!The high heat stir fry locks in the fresh sweet flavor of the slightly crunchy eel. The sauce is soysauce based with lots of complex umami richness. The chewy noodles are called 意麵not to be confused with 意大利麵…while the surroundings are not the cleanest it's full of atmosphere for people who appreciate these kinds of old diners. I tried heading over for another bowl before they open but there was already a long line...! Update: 2nd time I went I got one to eat two to take out ;)
