Each bean type has its own dedicated grinder, calibrated to deliver exactly 15 grams of coffee. After dosing, the barista uses WDT needles to evenly distribute the grounds, followed by a leveler and tamper for perfect consistency. The extraction is spot-on: 30 ml in precisely 30 seconds.
The result? A flawless almond-colored crema, a cup that’s neither overheated nor under-extracted — just beautifully balanced and full of character. Every espresso is served with a small glass of water (I’d personally suggest a slightly smaller one, since it’s meant just to cleanse the palate — but that’s a minor, personal note).
For this level of attention to detail and repeatable perfection, you could easily compete with some of the best espresso bars in Italy or Portugal.
