If I 0 star rating is available, I would have rate this at 0 star! The 1 star is only for the staff who gave good service. This is by far the worst over priced hotel buffet I had ever eaten in my entire life from a 5 star hotel. For the price, the food selection absolute is garbage quality. The same price range buffet in Hong Kong would have hot/cold lobsters, different varieties of crabs, crayfishes, Japanese sashimi/sushi such as Tuna, Hokkaido Scallops, Ika, Maguro Akami, Chu Toro, Herring etc., Ribeye or Sirloin or New York steak, large varieties of cold cut like Parma Ham/Iberico Ham and varieties of cheese, expensive hot dishes and soup etc. (Hong Kong rent and labor cost is many many times of Thailand) Hilton buffet only had shrimps, cheap shells and Fine De Caire oysters (rotten). Unfortunately, the oysters were not fresh, in fact stink! My wife tried the 1st one and stopped immediately, I had a few and ran into at least 2 stunk ones too so I stopped since I don't want to get food poisoning. There were 3 type of Sashimi, Tuna, Salmon and fishy Mackerel, all were improperly thaw out so they were basically tasteless as the umami flavor had drained away with the water. There were different low quality sushi made from the same low quality improperly thaw out fishes. The only beef available was cheap quality shoe leather tough rump cut, pork chops. The cold cut varieties were few, just three and the Parma Ham is so hard/dry/salty which made them unedible. The only edible item from this area was the smoke salmon. The low quality made to order hot noodle was worse than the local 50 baht street vendor variety, only minced chicken/pork or pork meatballs topping were available; from a upscale hotel like this one would expect the soup would not be a street vendor quality MSG soup! The dessert selection was very few too. The ice cream was served in a white rice bowl, an absolute lack of attention to detail for a hotel of this class! There was nothing good about this buffet offered from a high class hotel. One can get much much higher quality food from Haru for 1/2 the price 700 baht or Kazuhiro minus the ocean view. But one can't get full on ocean view! I had the pleasure of enjoying the Dinner Buffet at Edge Restaurant, Hilton Pattaya, and it honestly exceeded all expectations. From the moment I arrived on the 14th floor of the hotel, I was greeted with a stunning panoramic view of Pattaya Bay — the kind of setting that instantly puts you in a great mood for a memorable evening.
🌅 Ambience & View: I arrived just before sunset, and the view from the restaurant was breathtaking. The soft lighting and relaxing music made the entire atmosphere feel elegant yet casual.
🍽️ The Food: I went for the evening buffet, and the selection was truly impressive:
Seafood station: fresh river prawns, crabs, mussels, and oysters — all super fresh and kept refilled constantly.
Grill station: juicy lamb chops, beef steak, grilled salmon — perfectly cooked and full of flavor.
Sushi & sashimi: excellent quality, with salmon, tuna, and rolls freshly prepared.
Thai and international dishes: a well-balanced mix of local favorites and international comfort food.
Desserts: This was one of my favorite parts — chocolate fountain, cakes, mini pastries, ice cream, and fresh fruit.
🥤 Drinks: The buffet came with refillable soft drinks which was a nice bonus. I especially liked the chilled juices available near the dessert station.
👨🍳 Service: The staff were excellent — very attentive, polite, and quick to clear plates or help with requests. Our server explained some of the food stations and even helped recommend the best items. Everything was smooth, and the hospitality matched the Hilton standard.
💰 Value for money: For the quality of food, variety, and the stunning location — the price (~1,349 THB per person) is more than fair. I’d absolutely go again, especially for a special occasion or weekend treat.
Final thoughts: If you're visiting Pattaya and looking for a high-end buffet with beautiful views, premium seafood, and 5-star service — Edge at Hilton Pattaya is a must-try. Don't forget your camera — the view alone...

We chose an outdoor table, and the view and ambience were absolutely breathtaking. Overlooking Pattaya’s skyline and the ocean, the setting added a magical touch to our celebration. Although it was a bit hot that night, the beautiful surroundings and overall atmosphere more than made up for it.
The food selection was outstanding, offering an extensive range of dishes that catered to various tastes. Each item was prepared with exceptional quality, making it a delight for food lovers like the four of us. The value for money was unbelievable too—the pricing felt too low to justify such a great experience.
