On my last day in Bangkok, I was looking for some small eat before I headed to the airport, but stepped in this place. I was immediately amazed by the high traffic within the restaurant. They serve many transitional but delicately prepared Chinese food with visually appealing presentation. As a single diner, I was seated in a place that I could see all customers come and go and variety of dishes brought to their tables. Food quality: High. It is refreshing to have these traditional Chinese food after days of high-sugar and spicy diet in Thailand. I love Thai food. But I need something light for a break.
What you may notice, quite different from western restaurants, is that they have strictly defined roles for the staff, who are in obviously different colored uniforms. Those in black take orders, answer inquiries, prepare check and take payment. There are also lower ranked staff who are truly waiting along side and take away used plates, clean your table but do not interact with customers and strictly not serve food at all. There are also food porters who bring out dishes from kitchen to your table side. Only staff in black can move the dishes from porter's tray and present it on to your table. You may not think this is "efficient". Hey, this is not KFC or McDonald's. This is traditional Chinese dining culture.
