Instant Classic. I love tasting menus, and I wanted to try Dilsk as soon I heard about their opening, and the result surpassed the expectations by far.
When a restaurant opens it takes time to make all the pieces fell in place and have it running smoothly, and when speaking about tasting menus this is 10 times harder.
The surprise was when in the very first days it felt like the restaurant was running already for months. The decoration and the lighting is warm and minimalistic, perfectly paired with a playlist that keeps you in the mood without being intrusive, leaving all senses free to enjoy their best hidden gem, the food.
The menu is thoroughly design and the quality is just excellent, incredible in the combination of flavours and textures, a perfect show of the intentions that the Chef has for this place.
Very good selection of wines and very professional, acknowledge and friendly staff. Definitely...

From the moment you walk in and are greeted by the amazing staff, you know you’re in for a great experience!
I went with my fiancée and and we had the full tasting menu between us and everything was incredible! The food here is literal art, and the visuals are backed up by amazing and creative flavours.

And staff continually kept us glasses topped up, and explained dishes to us. The head chef even came table-side to present some of the dishes to us, explain what they were, and then garnish with sauces where necessary.
This is a special place and I can’t wait to go back and take friends and...
Read moreWe were looking for a fine dining restaurant in Brighton to go to after our wedding ceremony, for an intimate party of 10. Dilsk @ Drakes hotel in Brighton pulled all the stops! Not only could they facilitate a private dining room, but also adapted their fine dining menu for three children aged between 7 and 12. Serving them pasta and delicious nibbles. They provide two canapés on arrival, which left our mouths watering and excited for the rest of the food. The adults decided to go with the short menu and it was incredible from start to finish, with all locally sourced ingredients. The price was very reasonable too considering the quality of the food and ambience of the room. We honestly couldn’t ask for anything more out of the experience we had. Maddie and her team were faultless, super accommodating and never let a glass go empty!! We cannot wait to return to...
