So this review is 5 stars because of one reason, Ethan and the incredible team behind the amazing rum selection they have. The food would probably land around a 7.6 out of 10, some dishes were great, others, well, not so much. I would suggest skipping the Albondigas and the Chorizo dishes, but definitely get the Risotto, which was fantastic, and the Gambas Tigres. Also don't feel bad about salting the food, all of our dishes seemed devoid of salt.
I ended up trying 5 different rums in all, I can't handle more than that as I am a bit of a lightweight. Here is the list of what I tried:

Every single one was absolutely phenomenal, and ending with a relatively rare taste of the Appleton was a super special treat that I would not have gotten to experience had it not been for Ethan. Ethan truly made the experience, luckily it was Sunday early evening so they were not busy and he could spend time going over the menu with me. I can be a bit overbearing as a customer when I am super excited about something like getting to try a bunch of amazing rum, but Ethan was more than happy to have someone to talk rum with, so it worked out for both of us. I would absolutely suggest to anyone even slightly interested in rum to make this place a destination asap, you will absolutely not regret it.

Service was practically 5 star, treat the staff well and they will look after you.
Upstairs is where the tapas is served, much of it was very pleasant, some was run of the mill but again cooked well. I can only summarise that Cuban cuisine whilst it has its national dishes is born out of a nessecity to eat and not a gastronomic adventure.
Meatballs were certainly home made and tasty, chicken and sausage was pleasant, tiger prawns were well... the sort from Iceland with a mayo dip, which are lovely but nothing special.
The salad was amazing, the sautéed potatoes again amazing, olives beautiful. Overall very pleasant.
Finished the evening off with a good cigar and a good brandy. Every request was accommodated and the service was 5 star.
Where the establishment let's it's self down is not the food, management or service but rather it's audience. It is torn between providing a vibrant drinking establishment and being the hip place to be and being an upmarket tapas and dining establishment with good quality alcohol and cigars.
But in fairness with today's climate I would probably hedge my bets and try appeal to all markets and be a little bit of everything to all.
One thing I would whole heartedly recommend to management would be to review the staffing numbers - there were a LOT of staff and also offer tapas across the entire premises. The tapas is mainly batch cooked and could easily be served everywhere, and food has a remarkable sobering effect...

We came here yesterday as a group of 14 for Bottomless Brunch - all went well at first they were Friendly when I first went in to set some decorations but when the brunch started the problems began.. we all paid nearly £50 for a deluxe bottomless brunch, drink selection was disappointing & service was SLOW. People were thirsty & drinks definitely weren’t ‘bottomless’ we had one glass of nasty prosecco on arrival & a badly-tasting sangria.. 2 drinks each and then they stopped.. staff point blank refused to bring more unless glasses were all empty (most people didn’t drink the sangrias as they were not pleasant we highlighted this to the staff) Staff were aware of 3 latecomers in advance, food came out & latecomers arrived afterwards yet they refused to feed them.. why wouldn’t you keep back 3 dishes until they got there? They then had to pay for extra food despite already paying £150 between them for the brunch & not receiving anything. When complaints were raised, staff were ignorant and SO RUDE & started turning their backs, stood in groups around the table talking about us/pointing at us, the manager was HORRIBLE he made us feel so uncomfortable & refused us any more drinks after we raised our complaints. Anyone that complained for pointed at & staff told “that one is not having another” We felt so unwelcome so we left.
