This is, in my opinion, the best taco truck in the Bellingham area, and probably the best burrito in the 98225. Service is quick and to the point, although do be warned they only take cash. I am a burrito purist, but have tried the enchiladas as well as the taco plate, but they did not stand out me as much as the wonder burrito. Super Marios Taco Truck also has a selection of baked goods (will try soon), sodas (canned and glass bottle coke, Jarritos, Mundet, Sangria). They also have some sweet t-shirts if you're looking to expand your wardrobe. Now onto my favorite burrito! Originally the carne asada held my heart, but you might be disappointed by the lack of actual meat. I recently switched to chorizo (not posted on their menu) which adds a good depth and has an incredibly more pronounced flavor profile than the carne asada, although not entirely traditional. The rice is married to a sort of creme fresc/cojita cheese which will satisfy you to a T. Cabbage is included and adds a wonderful crunch and lightness to an otherwise heavy meal. Somewhere in this delicious food tube you will find a slice of ripe avocado, which is always a treat. You will also find a selection of hot sauces, red, green, and habañero. I always feel weird posting burrito photos because it’s like “here, look at the thing I bit into”. Anyhow. Super Mario’s is the best Burrito in town. I think about the wonder burritos all the time. I talked to the proprietor who goes by the name of Super Mario. He was super nice and let me practice my Spanish with him for 10 minutes or so while the food was being prepared. Speaking of the food.
