Last night, we had the pleasure of dining at Cozobi Fonda Fina, and it was, without a doubt, the best restaurant experience we've ever had. From the moment we walked in, we were greeted with exceptional service that set the tone for the evening. The staff’s attentiveness and knowledge about the menu were impressive, making us feel both welcomed and excited for the meal ahead.
The food at Cozobi Fonda Fina was nothing short of extraordinary. We were fortunate enough to sit at the chef's table, which allowed us to learn so much about the food and the inspiration behind each dish. The menu was incredibly creative, offering a range of flavors we didn't know could exist. Each bite was a delightful surprise, showcasing the chefs' passion for serving the best food possible.
Two standout dishes were the camote asada and the quesadilla de rajas con crema. The camote asada was perfectly cooked, with a rich and smoky flavor that was both comforting and unique. The quesadilla, filled with creamy rajas, was equally exceptional, offering a perfect balance of textures and tastes that left us wanting more.
The margaritas at Cozobi Fonda Fina were fantastic. Each sip was refreshing and perfectly balanced, complementing the flavors of the food beautifully.
Overall, our experience at Cozobi Fonda Fina was unforgettable. The combination of exceptional service, creative and delicious food, and the opportunity to sit at the chef's table made for an evening that surpassed all our expectations. Read moreNow that was an experience! We've already tried the Alma version of this restaurant in Denver so we were very familiar with the concept and what Kasie and Johnny were bringing to the table.
Now with the new Cozobi concept opening around the same time my mom was having her birthday it was a no brainer. We kept telling everyone in our group "if it's anything like the Denver location you're gonna have your mind blown." This might sound over the top but I don't think the phrase "mind blown" even did our experience justice.
From top to bottom every plate we ordered was incredible and so much depth to it. We ordered the Elote Caesar Salad, Camon's Asado (sweet potato dish), Guacamole a las brasas, fire roasted oysters (a la leña), Scallop tostada, Coconut Ceviche, Flautas de Birria and Pollo a Las Brasas.
I need to also say the drinks were phenomenal. Every loved their alcoholic versions and since I was on DD duty I ordered the kiddy version of the Jamaica (Hibiscus) drink. It was so good i ordered two.
Once again Johnny and Kasie knocked it out of the park, way better than the Rockies have in recent years, and should take the crown on the "Fonda Fina" category.

The avocado margarita was bright, vegetal, and crowned with a smoky, ashy salted rim that was super unique. Guacamole a las brasas with charred vegetables and full-tortilla chips set the tone, while camote asado leaned almost into dessert territory with sesame-crusted sweet potato and fennel requesón. Queso fundido brought pure joy with a molten, generous cheese pull.
For mains, the cochinita pibil taco balanced fiery habanero oil with rich, slow-cooked pork, while the costra de NY strip wrapped beef and crisped cheese into indulgent bliss. A glass of El Bajío Brut Mexican sparkling wine was the surprise hero: lively and mineral, just sweet enough to tame the heat and cleanse the richness of everything. (Great in the Mex75 too)
Dessert was the only stumble: a tres leches with a dry crumb drowning in spiced milk, and citrus supremes across the menu felt flat. In the heart of summer, peaches could have sung louder (tres pêches, anyone?).
