Recently dined at the Boulder location and sadly all missed the mark except for the tortilla chips & queso - they were amazing.
We each ordered a margarita, mine coin and his spicy. He was sad his wasn’t spicy and mine was bland compared to others I’ve had at nearby spots. We dove into the delicious queso and warm chips. Highlight of the visit.
Staff was friendly tho stretched thin and doing double duty at the bar. Gotta feel for them. Family with kids also left a horrible mess with fries all under the tables next to us. Felt bad the wait staff had to clean that all up.
My dish (enchilada, tamale, rice and beans) was bland I went up to the bar to ask for hot sauce (staff didn’t check in with us who it our food tho did check on the table next to us which was curious). The tamale was also super disappointing as it was both gummy and lacking in flavor. The meat in my boyfriend’s tacos was dry and lacking in flavor. Neither of us cared for the rice or beans.
When the staff finally came round (to see if we wanted another round of drinks) I shared my findings about the tamale (there was def something wrong with it as it was nothing like the ones at their sister restaurant). They apologized and took a couple dollars off my meal which I appreciated tho left 90% of my plate uneaten. All in we still spent about $80 and left super disappointed.

Read moreFood: why have the chips come in a plastic bag? Ffs waste of plastic and you can use trays for your chips. Salsa has very little flavor, could just be water. Queso is weak with a single cheese flavor with veggie bits floating indicating flavor, but provide nothing but lackluster garnishment. Tried out the ahi tuna tacos and they weren't bad. Ahi tuna tacos have a bit of citrus zest and very little seasoning. The single thought of adding other food to it to give it flavor is the only thing going for this place and that's not done well. Also why do a lime wedge for the ice tea? Music: I get the mariachi music is a "staple" of Mexican culture, but c'mon with the poppy music it doesn't fit the ambience that this place is trying to garner with whatever it has. Within the Mexican music culture has vibrant artist and this place couldn't even try to represent. Service: the server and other person asked frequently if things were alright and presented themselves very well.
Overall glad I wasn't the one to pay.
Edit: I know I struck a chord, so I'm back and I still haven't gone back with all the weak mexican restaurants in Colorado. You're creating more waste than trying to have people take more food. Fresh tortilla chips is where it's at, don't give me such a lame excuse. Read moreGreat Service! I got there at 11 am, right when they opened. Celeste got me started off with a drink and a menu and some chat. Ordered the special, a machaca taco and a carnitas taco, with rice and beans. Really I just wanted two of everything! Got set up with chips and salsa while I waited for my food. The chips are hearty, not too thin. The Rojo is good but the Verde is really nice! A bit sweeter than I expected. I couldn't stop eating it. My food came quickly, I was still enjoying the chips. Tacos were awesome. stuffed to overflowing with rich meatyness and flavors that harmonized and ran counterpoint. Rice was rice. Beans were a kind of almost refried beans stew/chili with cumin and salt and delicious and warm. Talked with KC, one of the owners, while I was there. He told me his story about how they got started and I told him mine about starting my own food trailer. He took me out back and showed me their food truck and gave me some great advice about starting my own operation. When we came back in through the kitchen, one of the cooks grabbed KC'S attention with a four foot long order ticket. I got out of the way to let them get it on. When I went back to the seating area the place was packed, apparently the locals know what's good too. Nice lil bar set up they have, and I like the feeling of openness, you don't feel cramped.
