Brooksville...lots of history in this county seat of Hernando. The downtown section with the old/new courthouse and other government buildings stays busy with the buzz of daily 'governing'. Weekdays the population swells as folks arrive to conduct business or to earn a living.
The one thing all visitors to downtown have in common, they gotta eat! What a special place to be for lunch. I enjoy seeing people emerging from within those brick and mortar jurisdictional domains. Kinda like disturbing an ant hill and watching as the workers scurry out. These great representatives of the public spreading out in every direction to find their favorite nearby eatery. Plenty of them land at Enchiladas.
Enchiladas Mexican is conveniently located within walking distance of the courthouse. I drove from the 'other' side of town, just to try this place out.
I had a nice laugh even as I was entering through the side door. They had a portable sign placed there that said 'Soup of the day - Beer'. I thought "Wow!", I LOVE Beer Cheese soup! I guess my mind overtook my senses, as the sign literally meant Beer, not any type of soup. But, it broke the ice with the greeter and my soon-to-be server Carcy. We were all laughing, but now these two were intriqued about my description of Beer Cheese soup. I'm sure they'll be on the lookout for some of this delicious comfort food.
So Carcy brings me the usual chips and salsa. I was pleased to see several different colors of chips in the basket. That shows me a little creativity! And the salsa was excellent! They bring you a bowl of hot and a bowl of mild salsa. I eventually mixed the two together and it ended up just right for me. Nice combination of heat, texture and ingredients.
Carcy was an upbeat and bouncy kind of person. I felt welcomed and valued as a guest. With Carcy's expert assistance, I ended up ordering the 'special'. A White Chimichanga for just $8.80! Bring it on!
I found the Chimichanga to be an excellent choice! Perfectly prepared with a whole lot of tender chunks of chicken. This deep fried wrapped burrito was great. It was swimming in a sea of creamy smooth cheese...I believe it was a Cheddar cheese mixed with some other ingredients?
Along with the Chimichanga you get a side of refried beans, rice, dollops of guacamole and sour cream. I felt the beans were just a wee bit watery, I love when it's more of a paste consistency. And I would have loved more guac! You can 'never' get enough guac....
Now I figure you MUST be wondering, John, where is your usual sidekick fab fiancée?? She's always with you for these reviews and we love reading how you describe her reactions to your latest food finds.... Well, this was a solo trip for me. She actually does trust me out in the world, but I do have to promise to be good.. LOL
In closing, definitely give Enchiladas Mexican Restaurant a try! You'll like it! Plus, you may just see me WITH my hottie...

Read moreThe quality and authenticity of their Mexican food is just not up to par. It seems like the cooks in the back, all the way to its wait staff are tired and don't care. They'll greet you as you come in but other than that their food quality, presentation and taste leaves a lot to be desired for. I can get better tasting Mexican food from a Mexican food truck. Their taco meat (chicken, beef, steak & carnitas) was overcooked and dry. They only use one corn tortilla instead of 2, so your taco breaks apart when you pick it up. The limes they give you are dry. Don't order their taco salad, unless you want a greasy, drenched and soupy bottom in your salad. Obviously, they don't care to drain the grease on their meats before they pile it into the shell with the toppings. Their burritos are the same way, the meat is very greasy when they put it on their flour tortilla, that it soaks the tortilla in the bottom. It just taste like they don't take pride in cooking, presenting and serving their Mexican food. I don't think I'll be coming back here anytime soon. I'll drive to Tampa and go to Loli's to get my Mexican...
