Cado’s Egg Truck is a must-try if you’re in Castle Rock! Their burritos are amazing — packed with flavor, tons of options, and everything is made fresh to order. They’re great about customizations too, which is awesome.

It’s definitely not your typical burrito — it feels like a gourmet experience without the fancy price tag (around $12). You can really tell they care about the quality of the food. Even though it’s a food truck, it tastes like you’re getting a meal straight out of a sit-down restaurant.

This place was great. It is a building, not a truck. Hopefully that makes it a little easier for you to find because it is worth the stop. We had to order from our phones even though we were already there so maybe put your order in when you’re 10-15 min away and you’ll wait less? They don’t really have seating so plan on that.
