Overall, I would give Hokkaido Ramen 4 stars, because the system will not let me give 3.5 stars. It could have dropped a little lower based on a few things, while others could have given them a higher rating.
Quick service a. We arrived just after 1pm on a weekday and were seated almost immediately. This was great and the traffic was steady in and out while we were there. b. Our waiter was not overly attentive once we had our meals. It was a struggle to get his attention, but he was friendly. Did not really give any recommendations though even though it was our first time to Hokkaido Ramen House.
Ambience a. Nice layout with high tables as well as regular type restaurant seating. b. The music was LOUD and wildly inappropriate. The music was some kind of rap or R&B and some of the songs were very suggestive and certainly not appropriate for young children. We did finally ask our waiter if the music could be turned down as it was way too loud (louder than Texas Roadhouse) which he agreed to, so thank you for that. c. With this being a ramen house, I think that the setting would be more appropriate with Japanese style music or instrumental.
Food – This was where some of the problems occurred. a. For the price of the ramen bowls, to only receive one small piece of pork belly that was 4 smallish bites in total is very poor. Considering most of the bowl is made up of noodles, one piece of bok choy, and one small piece of meat, definitely not worth $15. Compared to other places we have eaten, more meat needs to be added to be comparable. b. Gyoza was really good. c. Baozis were also really good. d. Flavor of everything was good, but a little strong on the garlic. I think this may be partly growing pains and I hope it will get better over time. e. Vegetarian options are available f. By the time our food had sat on the counter, it was not very hot. g. Dessert – two tiramisus were ordered. They were still frozen when they arrived at the table and clearly had come out of a package. Definitely not worth $9 a piece for either the styling, the taste, or the size. Have gotten better portion sizes and better quality at a steak restaurant for less than $9.
Conclusion: We would probably try this again, but the price is high for what you get either in Cheyenne or even down into Fort Collins and Loveland area. I hope some of these areas are addressed and if so, I would continue to give business and would...

The food: delicious Our waitress: total sweetheart and super friendly The atmosphere: modern and perfect for the downtown vibe The cost: under $75 They have completely remodeled the Cheyenne Cuisine with an open floor scheme that allows you to see directly into the kitchen. We had the Jasmine Hot Tea, 2 different types of Ramen, the Pork Buns, the sushie Rock Roll, and some TakoYaki. The tea pot they use is absolutely unique! (I want one)The Tonkotsu broth was perfect. (and I've had some Tonkotsu in my day!!) the Pork Buns are a unique spin as they are more like a bun taco than a bun bun but were still soft and delicious. (I wish they would coat the pork in the BBQ and not spread it on the bun though.) The fish and eel in the Rock Roll were super fresh and the outer crust fried to crispy delight. But the TakoYaki... It was so fresh that it burnt my mouth which did not bother me at all because i LOVE my food hot from the kitchen and the flavor was perfect!!! The ONLY complaint I could find was that the Pork in the ramen was a big cut and I couldn't cut it with my chopsticks despite it being SO tender and I ended up having to use my fingers. Not very lady like at all but one does what one has to. We left full, and deeply satisfied with the entire experience and look forward to our next visit.

Read moreUpdate: Okay I'm going to be "that" guy, but as I live near the restaurant, I have now been here 3 times in the opening week and I'm fully responsible for the bad reviewers wait times, sorry. I now have had several of the items on the menu. Decent selection of Japanese apps and sushi items. The sushi is better quality than anywhere else in town but small selection, at the moment I hope the quality remains over time, unlike other places in town after they first opened. The place is still extremely busy so wait times are variable, and staff is doing the best they can, given the volume of people coming through the door. The interior is fun, love the lights and the sushi bar vibe, wish they had a true sushi bar, but the size of the restaurant is small. The ramen is very good as well, happy to have a place in down that does dumplings, shu mai, and bao. They say they will eventually have sake and beer options.
