There's a moment with every Mexican restaurant where you take that first bite of their food and you can tell whether or not the food was made with heart and soul (and more importantly, good ingredients).
It's the difference in biting into taco bell vs eating a home cooked meal. These guys must treat providing quality food like a competition because I rarely get to enjoy Mexican cuisine this good outside cities like Tucson. There is no question: they have the BEST BIRRIA TACOS IN DENVER!
Individuals who came in were treated like friends and family, and were serviced to the highest degree that we could ask for. They must pay their servers well with all the smiles we had. We were very impressed with our server and with the food offerings of the restaurant in particular.
Chili Shack Larimer has brought the authentic cuisine feeling all the way from the deep South, into Denver Colorado for everyone to be able to enjoy. Be sure to thank the cooks, owners and operators when you can! Their chain locations are some of the most consumer-focused Mexican restaurants in Colorado and elsewhere , if not the most. Chili Shack Larimer will become a reputable staple in the Denver food scene very quickly if they continue to provide the customer care and food quality they do.

If this is what passes for chili in downtown Denver then the city is in trouble. The food here is honestly some of the worst I've had. I didn't like it the first time I came in but figured I would give it a second try. The Chili was greasy and tasted like it had been sitting on a stove all day. For a place that markets its self around chili you would think they could make one dish that wasn't disgusting. The only good thing was the biria, but after the experience I would say save your money. There are so many other places to get good Mexican food in Denver. What a waste of a good location. To who ever just responded, this isn't a fake review. Theres an entire building of people I live with that have had a bad experience in this place. I would be expecting more of these. Were not fake. Read moreI had an awesome experience at Chili Shack! I ordered the horchata, chili cheese fries, and street tacos with consomé, and everything hit the spot.
The horchata was perfectly sweet and refreshing—just the right balance of cinnamon and creaminess. The chili cheese fries were loaded and flavorful, with crispy fries holding up under a generous layer of chili and melted cheese. Definitely messy in the best way. The real standout, though, was the street tacos with consomé. The meat was tender and well-seasoned, and dipping them into the rich, savory consomé took them to the next level.
Service was fast and friendly, and the vibe was laid-back and inviting. Will definitely be back to try more...
