I'm gonna go on at length a bit here, so let me just keep this first part concise and to the point; THESE ARE THE BEST TACOS THIS CALIFORNIA BOY HAS EVER HAD. So as I mentioned above, I have invaded Utah from the land of it's sworn enemy. But rest assured, I am a traitor, and hate California with every fiber of my being. Whether it's the outrageously high taxes, the soul crushing home prices, or the rampant open drug use and homelessness, California has become a sunny dystopia. Despite all of that, I don't think anyone can deny that California has some of the best food in the world, and that rests largely on how good the Mexican food is. Prior to coming here, I have lived my whole life in several different areas of both Southern and Northern California, and there was never a shortage of taqueria options and quality wherever I found myself. While I can't say that I've tried every one of the places that get the most votes for "best Mexican food" in the state, I have eaten at dozens of taquerias and taco trucks. And like I said, it's a wide range of quality. Several of the places that were recommended to me as the "best", were incredibly disappointing. A few have been really great, and worthy of the California Mexican food hype. In coming here to Utah, I was expecting quite a drop in food quality , and unfortunately that has generally been my experience. Don't get me wrong, Utah has a lot of the right fast food chains, and I have had some solid places outside of those as well. The food scene overall here seems to be upgrading pretty quickly. Never in a million years did I think I would have food here that would make me think "this is the best _ I've ever had", let alone for it to be the best Mexican food. But here we are. I'll say it again. THESE ARE THE BEST TACOS THIS CALIFORNIA BOY HAS EVER HAD. I would normally say it's okay to be wrong, but if you disagree, this time it is not okay. You think you know a better spot? You don't. You haven't tried Taqueria Los Primos? Something has gone wrong in your life. There is only one solution, and it's to go visit Edgar's truck. Which by the way, if Edgar was the rudest nastiest dude on the planet, I would still go here EVERY SINGLE CHANCE I GET. That's how good the tacos are. But guess what? Edgar is incredibly nice, super welcoming, and very personable. You cannot get a better food experience than this. And again, disagreeing would be okay in any other instance. Not this one. Go there. I’ve been greeted by nothing but friendly people with the right attitude that makes a long workday better Edgar the owner of the stand is a really nice standup guy who takes the time to make the food that way you want it and it’s considerate if you’re in a rush to get back to work the first time I bought a taco from them.
