This is an outstanding local restaurant featuring traditional Japanese cuisine, sushi and sashimi. It also has a very good selection of appetizers, entrees and fish offerings, such a teryaki and tempura.
The owner takes a lot of pride in his offerings and in my opinion his fish selections are the best in the area. Sushi is now offered in quite a few places in Princeton, Hamilton, Kingston and this trend is growing. However, we are seeing more and more all you can eat places, and the quality in these places, and especially the freshness of its fish, is somewhat suspect. I have personally seen a rise in the use frozen fish and a rather unspectacular reworking of fresh and frozen fish in these new places. I also note that the flavors and sauces tend to be one dimensional and uninteresting.
This is not the case at Sushi King. Take for example the mustard accompanying their shumai. It is distinct. The same can be said for the sauce accompanying their chicken katsu. Again, it is distinct and different when compared to other sushi restaurants. Sushi King also has an impressive variety of roe which is often used as a garnish to add color and distinctive taste to rolls.
If you really want to get to the heart of the matter, sit at the sushi bar with Eric Chin (the owner) and ask him to prepare for you a very traditional sushi lunch with only fish, short grained rice, soy sauce, wasabi and ginger. Focus intently on each separate fish offering noting its taste, freshness and "feel in the mouth". I really learned a great deal about sushi and in particular this restaurant and its owner when I did this. Subsequent visits have added to this understanding and appreciation.
This approach is the basis for all of the items on the menu, including more complex offerings. Start with high quality ingredients and build from there.
i can also recommend some experimentation with fusion offerings. Johnny, who works both the sushi bar and in the kitchen, can prepare something unique for you, typically off the menu, if you share with him the ingredients you like and allow him some creativity. This can be a really special experience. I can also recommend the white board offerings on the wall next to the sushi bar.
Prices are moderate generally speaking. The wait staff is courteous and pretty good with English.

He walked up to me with a mouth full of food asking me what my order was. After making sure everything was in the bag I noticed that something we typically always order was not the correct order. I asked the gentlemen politely to give me one moment while I got on the phone quickly, to double-check with a relative of mine to make sure that was in fact what they ordered. The gentleman who was "helping" me took it upon himself to sit back down to eat more, and left me standing there. After making a mistake on my part and correcting the order the gentleman said okay you wait they're going to make it now. I quickly asked to make sure this order was going to be the correct portion, the gentleman replied "no it's not it would be a larger portion if you came and ate inside." The miso is perfect, and the ginger dressing on the salad is so good, I eat it with a spoon! My children feverishly gobble the yaki udon. What really sets this place apart, is the service. Irene so pleasantly serves us, and Jenny (chef) always comes over to say hello to my children.
