Someday I hope to come back and give this spot 5 stars because I really would like to. The bagels I tried were fresh and delicious, joyously crispy on the outside like a bagel should be, the perfect chew at the center, and the flavors mild but spot on. However, I hate to say it, but I don’t think enough thought and testing went in for launch. A new food shop shouldn’t sell out of it’s main item in less than 2 hours (especially considering they had bagel quantity constraints per customer) when designed to be open for more than twice that. The staff seemed mildly stressed about the situation when they should be welcoming new customers in with excitement to set the tone for the business. The shop should have done a longer soft launch and tested it’s kitchen and staff to max capacity to see if the place is viable for scale.
It’s a bagel shop, a hungry customer should be able to come in to grab a bagel and have it any way they want- this includes without spread or sandwich style and bring a bagel back to their kid who doesn’t like cream cheese.
I can’t imagine how many disappointed customers left after seeing the line, or sold out sign, or the fact they can’t get a bagel without cream cheese on it, and will go home to their family and friends and warn them not to go. I’d like to see this bagel shop succeed, but right now I...

Uncle Stevey's is a fantastic spot in El Segundo that's quickly become my favorite bagel place. They handcraft all their bagels fresh daily, and it shows! The texture is spot-on: crispy on the outside and chewy on the inside, just like a true East Coast bagel should be.
For my visit, I went a little overboard (but no regrets!). Here are the highlights:
Lox on Rosemary Olive Oil Bagel: This combo is pure heaven. The savory lox pairs beautifully with the fragrant rosemary and rich olive oil in the bagel. BEC on Cheddar Hot Honey Bagel: This bagel is a sweet and savory dream. The cheddar adds a sharp tang, balanced perfectly by the drizzle of hot honey. It's the perfect base for a classic BEC (bacon, egg, and cheese). Chocolate Chip Cookies: Don't skip the cookies! They're warm, gooey, and packed with melty chocolate chips. Uncle Stevey's isn't shy with their variety either. I also grabbed a pizza bagel (a childhood favorite!), a garlic onion bagel for later, and of course, an everything bagel because, well, everything!

I had been wanting to go for months after hearing about it and finally had time today after dropping off fam at LAX. I had the CHEDDAR HOT HONEY toasted bagel with a green herb cream cheese—SO GOOD.
I also got a dozen bagels to go since they had some unique spins on classic flavors (everything, jalapeño, etc) and some really innovative flavors I had never seen before (zaatar, black and white sesame, berbere, cheddar hot honey and more). Classic schmear or unique flavors they blend in house are also part of the mix! They’ll even give you freezer bags to help keep ‘em fresh.
