Ladies and gentlemen of Eureka Springs! Lend me your ear, and lend Pauly your taste buds, for this - this is not simply a burger restaurant - no. This, is a my friends, is a temple of taste. A festival of flavor. A CELEBRATION of succulence.

Pauly has perfected the process of pleasing not only the palate, but the soul. This, boys and girls, is Cheeseburger 101.

The bun, fluffy and light, glistening in the sunlight. The patty, perfectly crisped at the edges, flavorful and juicy at the center. The lettuce, tender and crisp, perfectly contrasting the texture of what may very well be the perfect burger. The cheese, masterfully melted with such elegance it could be the final scene of a romance film.

And the fries - oh, the fries. Delicately dusted with the perfect blend of seasonings. The exterior, sturdy and crisp, the Paladin protector of their fantastically fluffy center.

This burger shouldn’t just be eaten. It should be studied. Enshrined, NAY - worshipped, as a shining beacon, a pinnacle of perfection to burger purveyors nation- NAY, worldwide.

Be it a simple five mile drive or a worldwide pilgrimage, this, folks, is well worth the price...

Pauly’s Pauly’s Pauly’s…PAULY’s!!! Whaaaaaaat. The smash they put on that burger. Customer service bang. Grabbed my food to go. Ate some sweet potato fries in the car. Had to walk back in and grab another order of them cause man… (lip biting). And then the guy, (I guess he was the cook) asked me very boldly and confidently, “How you like that BURGER?”. I hadn’t tasted it yet. I grabbed my order from the lovely staff..(everyone was so helpful), and bounced. Man… I prayed. I tasted the burger. God bless!!🙄🫦 I almost felt violated tho. Thinking about how confidently the assumed cook who asked me how the burger was made me feel dirty. He knew that burger rocked my world. He had taken an uncomfortable amount of pleasure knowing that he was apart of what went down in that car. Whatever. I smashed the rest of the food. Almost went in and ordered another burger for the road (would’ve been worth it). Peep this tho… I was gonna taste the burger before going back in, but it was too hot. I felt almost as if I had skipped satisfying this guy’s confidence about the burger, but man…here I am writing a review in the parking lot. He may see me, but I don’t care. The food...

Tl:Dr, it's expensive for what it is.

There isn't much selection. That said, the burger is a good quality beef, which is nice. The patty is a thinner 'smashburger' style, I'd go for the double. The bun is a brioche and was decent. Nothing really stood out to me to be honest. Pretty decent burger for fast food style, but not good enough for restaurant quality in my opinion. The restaurant is a fast food style, to be fair. The fries are hand cut and pretty decent, fried in beef tallow I believe (not sure), but I'd like to see a lawrys or blackened seasoning on them. They could be better, but great for fast food style. For fast food, you've got to have a combo though in my opinion, which Pauly's doesn't do. The branding and packaging is nice and feels pretty classy, I really like their packaging. The gelato (I tried 3 and bought 3 others) was super underwhelming. The flavors are strong and unique but also somewhat...meh. Overall, I can't say I will be back, but I am...
