My name is Mike Hilliard and on Saturday, May 24, 2025, I was part of a team that orchestrated a large memorial service for a great man known to many. He was known from acting in movies, television shows, game shows, and teaching FEMA and Firefighter public information officer (PIO) programs worldwide.
People traveled from throughout the United States today to join the memorial and they represented diverse backgrounds, ages, and heritages. Few had ever had Cajun food before.
LaDeaux's is a fairly new local establishment. They operate out of a giant trailer; they may be classified as a food truck, but this vehicle is a food trailer on steroids. We requested them to cater the event as food could be cooked on site in their vehicle as opposed to food prepared elsewhere in a chain kitchen and just transported to the event to be reheated. I will always choose fresh.
The funeral services were held inside a large structure with over 100-attendees. A concern was where their vehicle would be placed, this one was right outside the entrance door.
Most food trucks have portable generators strapped to their backs and although it may say whisper on it, they are not quiet. LaDeaux's uses solar panels that return energy to batteries for storage and later electrical usage.
Because the trailer does not use a generator, we heard nothing coming from it. It was church quiet. And that is what we wanted.
When the functional component of the service was over, we had an open microphone for people to share stories while plates were fixed for lunch. The caterers managed the food by ensuring new trays came out when they got low. They helped serve the food but they also stayed back.
I have traveled on my stomach and love trying different foods. Quality establishments want you to return and to enjoy their food. The smokehouse pulled pork was moist, non-fatty, and lightly seasoned. The Creole pulled chicken had amazing flavors that did not bite back or cause pain. The mustard slaw was a nice variation on coleslaw. Coleslaw can be overly sweet but this one was not.
I ate two full plates of food and my mouth feel was well sated. They even make their own sauces. Utterly delicious.
Lastly, let me describe the scene of this event: This memorial had two fire apparatus onsite, one hanging a large American Flag that people drove by. A 13 member bagpipe and drum team played and escorted the widow. A firefighter Honor Guard stood at attention and delivered a folded flag to the widow. It was a combination somber, respectful, and professional service befitting for a man of our friend’s stature in life.
LaDeaux's Bayou Kitchen & Smokehouse provided prompt service, quality food, in a clean and professional manner. They set up and took down their serving trays and whatnots and helped us maintain the air of civility that was wanted. And they exceeded our expectations on the quality, quantity, and enjoyment of their food.
Seek this food trailer out and strongly consider them for any large catering event. You will be glad you...
Read moreOkay, buckle up your chin straps, here we go! First, forget that this is a food truck! This top-level comfort food brings the Black Water Bayou's of Louisiana right to your doorstep. Make no mistake, this is a genuine mobile "Scratch kitchen." First, I'll discuss my meal, the muffuletta. This sandwich was artfully constructed with the finest sliced meats. The olive salad topping was terrific with the perfect balance of seasonings. And the price point for a sandwich of this caliber was well beyond fair. Next, Kathleen ordered the shrimp and grits lunch. Kathleen has way more experience with grits than I do. The grits were prepared to perfection and had a beautiful creamy texture. Portion size was very generous. Next, the team at O'Reilly Auto Parts raved about the pork, so naturally, I had to bring home a sample portion to judge. They were not wrong! Whenever I try pulled pork, I first taste it without sauce to judge the texture and flavor. It was absolute perfection! The pork was smoked perfectly, and the texture of the meat had enough moisture and flavor to hold up perfectly. Also, not a lot of excess fat in the mix, which shows the care in the finished product, taking this extra step cuts your overall product yield, but creates a better experience for the consumer. Now, let's talk about sauces. Again, these sauces are scratch-made. All the sauces were excellent. Their sweet BBQ sauce is top-tier. This sauce could easily be bottled for mass distribution and outsell all the front-runners! The mustard sauce was delicious, and the vinegar sauce was tasty as well. Now let's talk about Beignets. If you leave without taking these away with you, you've done yourself a big disservice. These are authentic Beignets, and you also have sauce choices! If you like Jelly doughnuts, get the raspberry sauce, but don't sleep on the chocolate sauce. In summary, don't be surprised if this kitchen transitions into a brick-and-mortar location, which will undoubtedly do very well. We'll be ordering again soon. Thank you for an amazing...
Read moreLaDeaux’s is truly unmatched. The food is outstanding along with their service. I’ve never met such welcoming and talented individuals. You can just tell they put their heart and soul in every single meal. I’ve gone there numerous times and i’ve never been disappointed. I’ve tried almost everything on the menu and it was all fantastic to say the least. My all time favorite though has got to be their Boudin and Pepperjack Egg Rolls, with Cajun fries. It’s incredibly unique, with a burst of flavor. Along with their sauces all being homemade and so flavorful. Their Beignets are also to die for! If you haven’t tried this amazing food truck yet, you’re truly missing out. You won’t be...
