Top BBQ Ribs in Midwest…& I’ve spent time in St Lious, Memphis, and Texas. This place is a heavy weight hitter in the BBQ world, period….and somehow it is located in a food truck in Fargo, ND. There is a story there, I’m sure.
Stumbled on this place by complete chance walking by downtown and had the dry ribs and Mac N Cheese. Out…of…sight. The way you can really tell if a place does ribs well is to eat the dry ribs - this place killed it, full of flavor and the meat fell right off the bone. Took me back to my time in St Lious @ Pappys. I would say this place can hold its own in St Lious let alone Fargo. The ribs were so good I forgot to take pictures of the food, but I’ll be back here for sure when I return.
I started chatting with the owner, who mans the truck during the week, and it turns out that he is from St Lious! This is a family run business (mom, Dad, + kids)and these guys are from the homeland of the best ribs in the country. Good hearted people. 100% authentic…this isn’t some fake bbq joint like so many places around the country that claim to have ‘Star Louis style ribs’. This family actually learned their craft in St Lious growing up in that community, and man…did they learn it well.
The owner, a very friendly guy, has a cool story about how he ended up in ND and how his love of ribs (and food in general) led him to open this truck. Pretty cool to meet a passionate guy supporting his family with a craft that is close to his heart.

Read moreJust tried PICKaBOB for the first time. There was a bit of a wait but it was worth it! I only tried the kabobs, this time, but both consisted of large chucks of meat, perfectly seasoned and cooked to perfection... succulent. The food is prepared fresh with obvious precision, pride, quality and care. The service is friendly and upfront about what they currently have and can do as the truck seems to have a rather extensive menu where food trucks are concerned. Prices, at first, looked a bit high to me, but these concerns were alleviated on closer examination of the portions - one kebab was easily enough for one person, possibly two if you're looking for a fun little stop with a sweetheart where you get something to share while downtown. I look forward to visiting PICKaBOB in the future and I hope they have great success in Fargo. Oh and after note: if you like seriously spicy, ask for the house habenero sauce, as the person at the counter said: our philosophy is dip, don't scoop. It holds very true to form. Read moreI ordered burnt ends and rib tips as well as the barbecue nachos. I was highly unsatisfied. The burnt in were pure fat, there was no meat nowhere on them and it was only about 6 of them and the rib tips were not cooked through and they gave about 6 tips and the barbecue nachos had no toppings due to the refrigerator being out and neither meat came with sides or drinks and out total was $46 cash only and they didn’t tell you this until they handed you the plates. Once ingot back to the car and seen what they served me we took it back and she apologized stating she thought the meat turned into fat as it may have been overcooked. I had to inform her that meat doesn’t turn I to fat no matter how long you cook it. I don’t know if this was a bad day for them but I will never be returning and they only gave me a refund for the burnt in so the tips went right into the trash in front of the truck because there was no way I was going to eat pork that was...
