Pho-Ever has officially become my go-to spot for authentic Vietnamese food. Their menu may not be extensive, but that’s a good thing—it allows them to focus on Vietnamese classics without distractions like fusion or Chinese dishes.
I absolutely love their beef pho. The mother/cook serves up a phenomenal bad-ass bowl that’s piping hot and bursting with flavor. The ingredients are simple, fresh, and high quality, which you can truly taste. The meatballs are exactly how they should be—large and packed with tendon—just like the ones my dad used to make when I was growing up.
I also grabbed a banh mi thit heo noung (grilled pork sandwich) to-go, and it was delish—fresh, flavorful, and satisfying grilled pork (although could use a little bit more protein).
Oh, and I almost forgot to mention—despite my ramblings—the service here is excellent! The cook's daughter, who also serves, is incredibly attentive and checks in regularly to make sure everything is just right. A big "thank you" to her!!
Also, what would seal the deal is if Pho-Ever offers banh thom chien khoai lang (shrimp and sweet potato fritters) and banh xeo (stuffed crepe pancake)-- these are not common Vietnamese offerings at restaurants, more of home-cooked/traditional and may not sell, but that may be asking too much, since they recently opened three months ago🤗
Lastly, my friend ordered the bun bho hue (spicy beef noodle soup) and loved it. I really hope Pho-Ever stays true to their roots and doesn’t follow the path of cutting corners and quality. If they keep up this level of quality, they’ll remain a gem in the area and I'll keep coming back, especially lunches. Read moreSince my favorite pho spots in Folsom have sadly come and gone over the years I was very excited to see that there was a new pho shop across the street from BJ Cinnamon (next to the DMV). I ordered the chicken pho, my husband got the beef pho, and we shared an order of the grilled pork spring rolls (these are always a must order when I see them on a menu). Both broths were super flavorful without feeling overly greasy or salty and there was a nice amount of tender meat in each bowl. The spring rolls were also really good - not a true dupe for the famous Brodard rolls (IYKYK) but pretty close with the crunchy bits and delicious pork+peanut dipping sauce. I would have eaten 2 orders of them by myself! On top of the great food, the service was super kind and attentive - my two year old pho-slurper was welcomed with a high chair and was given a perfectly-sized bowl and spoon - and it’s very bright and clean inside. This is definitely going to be a new go-to for us and I can’t wait to eventually try their bahn mi and vermicelli noodle bowls.

I was pleasantly surprised how delicious it was and it gave me a nostalgic feeling during my childhood when my grandmother had cooked these dishes. The menu may appear limited compare to other places but do not let that fool you! Less is sometimes better when it boils down to using fresh vegetables and herbs, as well as the many hours it takes to slow cook the broths. I could taste from these dishes that the chef had put in a lot of TLC in her preparation. Today I ordered my first Pho Dac Biet & hot Vietnamese coffee to go. It was delicious, especially for this chilly cold day! Please taste for yourself at this hidden gem restaurant. March 2025- ordered Vietnamese sandwich and it was so flavorful and fresh..AND at $7 you cannot find this price anywhere, especially in Folsom!! Unlike other places where the bread may be a bit stale where it felt hard to bite in or fall apart afterwards, my sandwich was soft on the inside and crunchy on the outside.
