Mexico has a variety of foods within different regions. This means that tacos in the north are different from the South and other parts of Mexico. Tamales flavor and style also vary from place to place. With that said, my opinion comes from being Mexican and trying many tacos, tamales and other Mexican food. The food served here is very authentic. I had the caldo tlalpeño and it was great! It was just as my mom or grandmother would make them! Great flavor in most of the food I have tried. I would like the salsas to be more spicy in order to be more tasteful. I feel like a lot of water is added in order to bring down the spiciness. I think that if people want to try real Mexican salsas; they have to try them spicy. I tried the tamales and they were good, but I have tried better ones. The tacos were also good considering that there aren't many authentic Mexican restaurants here in Frederick. I believe that after being exposed to numerous types of Mexican food I have a very demanding palate and therefore, my expectations are higher. I understand that the restaurant may have a hard time getting the ingredients needed to make all the tasteful meals. I know I have had a hard time finding the ingredients for myself. First the positives: The tacos were very tasty. My wife and I had the steak tacos and they were filled with meat, cilantro, and onion. They were seasoned just right and they were filling. The place smells terrific. I know that sounds weird, but you can smell what was coming out of the kitchen and it makes you hungry. The kitchen is very fast. In the time it would take for you to get an appetizer at a restaurant you got your full entrée here at Café Bueno. Flavor was not compromised by the speed of the dish.
The downsides: The mark of a good Mexican restaurant is it's salsa. This restaurant has 4 different salsas. However, they are served in ketchup-like bottles, which means the salsas are not thick and chunky. Their standard salsa was watery and didn't have chunks of tomato, onion, or cilantro. The tortilla chips were okay. The fountain soda was a little flat.

We started with chips and salsa! So fresh and the salsa was amazing. It was enough flavor without overwhelming the chips. They also gave a good portion. I asked one of waitresses for a recommendation and she suggested the chicken and steak fajita. It came out really quickly and was amazing. The tortillas were so flavorful and the fajita mix was well seasoned without being spicy. My wife had the burrito pastor and she could not stop raving about it. The rice and beans ( usually an afterthought were also really delicious. I was really full and had left overs ( my wife ate all hers and reluctantly shared a bit with me).
