Georgie's is a deft addition to the Georgetown restaurant scene and instantly takes pole position.
Three of us tested the full range of the menu, from the alluring tequila-laced Day Sipper cocktail, to the beet salad, tuna poke tacos, ceviche, fried green tomatoes. To start.
Nothing missed the mark. The starter tacos are so delicious they're like a crunchy triune drug. We almost ordered more.
Beet salad: balanced, ample, delicious blend of gold and red beets, mild goat cheese, superb vinaigrette.
Ceviche is a top-shelf take on Peruvian, with house-made potato chips in generous support. We wolfed down the tomatoes in crispy corn meal and palette-perfect saltiness.
We added the sake-cured sea bass and dusted redfish for mains and both were so good we mourned the last bite. Fresh, balanced -- a recurring theme that's very hard to achieve -- delicious. The sea bass paired with smoky green beans is a southern take on miso black cod and it kills. I left nothing on the plate, barely a sesame seed.
Dessert was succulent flourless chocolate supported by a semisweet espresso martini. Check. Mate.

We went in yesterday evening after our courthouse wedding to get some dinner and we were immediately recieved with such warmth and kindness. Charles was at the host stand greeting people and asked what the occasion was. He was kind enough to put my bouquet in the fridge for me while we had dinner. He was so cheerful and excited for us šš Dave was our server and and beyond being great and kind he also immediately brought us a bottle of champagne on the house. The food was phenomenal. We tried the oysters, the redfish ceviche, the gumbo and the redfish with chile powder and everything was exceptional, no lie. Seafood is not all they do, so if you're not into seafood they have several other options as well. The space is gorgeous and bright and welcoming. Not at all stuffy. The staff is what makes it though. Brandon was great, many servers came by to say hi congratulate us. We arrived when they opened and had a great dinner! Our waiter was Dave! Thank you sir! Excellent job! By 5:30pm it was getting pretty loudā¦. We talked to some locals who said the owners are limited by mods they can make āhistorical buildingā stuff, cannot fix the sound issue. Suggest lowering the volume of the music, let the banter be the noise!
We sampled across the menu⦠crab cake was delicious, one of the best weāve had in a while. Ceviche and ahi poke tacos were super fresh, all made to order, great taste! The sake sea bass was awesome, cannot go wrong there! The gumbo was good, but needed a bit more depth of flavor (more spices)⦠plenty of seafood in the and the andouille was great!
