This is by far, one of my very favorite places to have a meal, or take out if I'm in a hurry. I have lived in Hillsboro nearly my whole life, but only visited Vivi's starting a year ago when my boyfriend and I met. He took me there and I was a bit nervous because I'm not a huge fan of Vietnamese food. Apparently, I just had not had the RIGHT Vietnamese food! Now most of the time when he asks where I want to go for lunch or dinner, you can count on me saying Vivi's. First off, their spring rolls are the best I've ever had. There have been times when my meals were entirely spring rolls, because I enjoy them so very much. I can't say anything about the shrimp ones because I'm deadly allergic to shrimp, but all the others are to die for. Perfect mix of filling, with a perfectly crisp, never burnt shell. The accompanying fish sauce is just the icing on the cake. A perfect pairing. My boyfriend always gets the vermicelli bowls. He loves them and somehow manages to consume the entire thing, I don't even know how because they're huge. I typically go for a rice and meat plate. I'm never disappointed. Their Vietnamese iced coffees are wonderful. We tend to let them melt down a bit as they are very concentrated, but it's only a preference and they're perfectly fine right out the gate. There was no wait time when we walked in - the hostess was extremely nice and even sat us at another table, as she walked by and saw a little splotch on the table she was initially going to sit us at, and apologized. This blew our minds as we have never had that level of service and mindfulness about cleanliness before. The restaurant was very well kept and gave an "upscale" feel which was great. From ordering our food to table was approximately 5 minutes. We ordered the Beef Pho, Chicken Pho, Summer Rolls and Pork Spring Rolls with a Passion fruit Juice.
Firstly, the mint and cucumber in the Summer Rolls were to die for! The peanut sauce they came with was so airy and light and went with them so elegantly - truly the sleeper hit for apps.
Secondly, Vivi's broth is the "cleanest" broth we have ever tasted in any Vietnamese restaurant, ever. It was rich, light, and all of the ingredients also tasted fresh, and lively. Honestly this was hands down the best bowl of Pho we've had thus far in the country.
If you are traveling or in the Hillsboro area, like Pho and have not had Vivi's? My lord are you doing yourself a disservice.

It is in one of the jars of evil-looking oily red paste perched at the end of the table along with the other condiments. The flavor is just brilliant. It was not as hot as I expected, but you can always add more.
This is a relatively small venue with limited parking. I would estimate the seating capacity around 24-30 but I didn't count the chairs. I would say that the parking is appropriate for the number of tables, but carpooling is a good idea. I went on Tuesday about 1pm with a coworker. We were immediately seated but a couple of others behind us had a short wait.
The menu is not huge but they do have plenty of choices. I recall soups, rice, noodles and banh mi along with appetizers. It seems like there are vegetable, pork, beef, chicken and combo variants of most dishes. The weather was a bit warm so I chose the pork banh mi and it was great.
