I came here for my birthday a couple weeks back and I still think about this restaurant. I really wanted to enjoy an omakase dinner for the first time and I was unsure of where to go. I also did not look well ahead of time, so I made a reservation here the night before and hoped all would be great. This experience absolutely surpassed my expectations. Upon arrival, there is complementary valet. We were greeted walking in and sat at the bar for the omakase, which had a little card placed saying "Happy Birthday", which was a nice touch. We were attended by Julie and Chef Leo primarily. Julie was extremely knowledgeable on all the restaurant had to offer and was super easy to talk to. She offered us great recommendations when we were unsure for desert, and gifted a cocktail on the house to celebrate for my birthday. She tended to us frequently, but was not overbearing. Chef Leo was an amazing personality, very fun to talk to and showed great pride in the food he curated in the omakase. Being able to see the process of the food being made was very entertaining to watch as well.
The omakase is about 165 per person, which is truly a steal considering the cost of each dish individually could be up to $45 alone. There were 16-18 dishes, paced well. The food was unlike anything I had tried before. I have had so much sushi in my life, but eating here made me never want to eat anywhere else again because I just knew it wouldn't compare. Each component was so carefully thought out. You could taste every single element of the dishes. If you ever thought you couldn't taste the difference between 3 types of fish that looked the same but weren't, well, you will definitely taste it here. I was genuinely so surprised at how fresh and quality the fish was and how much of a difference it made in really tasting the fish, in feeling the texture, the way it literally melts on your tastebuds. I did not expect to be full by the end of the dinner since most dishes are bite-sized, but I was definitely full and satisfied by the end of the experience. I'm getting hungry thinking about this place again.
Overall, this place is a must visit at least once. I went on a Tuesday evening, so it was not very packed, but Chef Leo said it could get very busy especially on weekends. The ambience when I went was perfect, as it was not too quiet nor too loud, and the place really carried an air of quiet luxury that was nice to sit in when you're eating food this good. Chef came from Soto and decided to open up Hachi. They have been open since October of 2024.
Decided to do a lunch bday celebration at Hachi and did not disappoint! A friend had let me know that their lunch special was quite worth it and it really was.
Janie was our server and she made some great recommendations on what to order as it was our first time. She provided great service and was friendly.
Ordered a mocktail first which was the guava punch (it was okay, wish it was a little sweeter).
Decided to go with the Chef 7pc Nigiri + Makimono Sushi Lunch set, which also included miso soup, house salad and vegetable tempura.
Noteable items from the Chef 7pc nigiri was definitely the yellows tail, salmon and toro salmon. I believe there was also seabass as well. The Toro Salmon was so tender and fresh. Did not even use soysauce, because all the of pieces were individually dressed.
For Maki, we chose the spicy yellowtail and eel avocado. I liked that the spicy yellow tail even had a bit of crunch to it as well.
The vegetable tempura included sweet potato, pepper, eggplant and a large mushroom. The batter was super light!
For extra, we also got the Toro Foie Gras Crudo. MUST GET. Totally just melted in your mouth and it sat on top of a tempura shiso leaf. Gave it that extra texture and bit of crunch.
Because we were celebrating a birthday, Janie brought out a complimentary dessert which was a delicious caramel flan and greentea icecream. Perfect sweet treat to end the meal!
Also wanted to note, they were able to accommodate to not having wasabi in the nigiri and cucumber if needed.

Me and folks went today for my bday. Didnt tell them as i hate the whole bday thing.. just want a yummy dinner with family..
They didnt disapoint.. the Oysters were A-freaking-mazing! Ive prefer a mignonette, but their ponzu?. with the caviar.. yum!!!
The vegi tempura... roasted corn. Were delish (i liked the corn w/ left over ponzu from the tempura rather then their served sauce. - differnt strokes.. different folks..
My only real 'complaint' was their timing.. maybe they were too busy. (It was 6pm ish cst saturday)
But the 3 of us.. had our main dish each come out at different times? Dads Chilean sea bass with this yummy buttery sauce came out. Several mins later then moms ahi? tuna comes out..(dad was close to 1/2 done with his meal..)
Several mins after that My 'main dish' is served.. (tarabagani on the shell)
I get its hard.. but.. folks at a tables 'main dish' should be timed to arrive around same time. Maybe they tried to match to appetizers/sides. (We were actually trying to 'save' some of the appetizers to have as a side w/ our main dishes) Maybe busy. Idk.
But really thats my only "complaint" and i admit maybe a kind of nitpicking one. But still fells a bit off when one persons has their 'main dish' while others are nibbling/stretching out appetizers.. for 5-10 mins.. then another 5-10 mins for the last 'main dish.' (By time mine arrived my dad was pretty much done eating his..)
Beyond that a great experience, our waiter was very helpful and understanding.. and gave some great recommendations. (Though he did point out the higher end sakes.. but when i said 'idk maybe something a bit lower on the list..' still pick an amazing one. Even my dad had a sip or 3 and liked it.
