Abelardo's Mexican Fresh — Restaurant in Jefferson City

We've been stopping every week hoping that they would be open....and finally today, YAY!! They have an extensive menu but we only ordered the 2 things that we, as SoCal natives, think all great taco shops should have, rolled tacos and carne asada burritos. The rolled tacos were legit, just "American" guac, shredded beef and shredded cheese. A+++ The carne asada burrito was another hit. Only steak, guac and pico de gallo wrapped in a big flour tortilla. A+++ They call it a "Classic" carne asada burrito. On a whim l ordered 1 taco de cabeza. Yes, it had double tortillas but only a couple spoons of beef and cilantro & onion. C+ Waaay over priced @ $4.30 a taco. The green & red salsa was spicy & fresh....

We were happy to see a decent addition to the long list of Mexican Restaurants to Jefferson City. Anytime we were craving Mexican food in Columbia, Abelardo’s was the place we stopped for a quick bite Good food, they did a great job on the interior, the restaurant was clean and updated, and a long list of menu items. They still haven’t put their salsa bar in yet, but we were served with several of their varieties. The only negative I have is that their menus were constantly changing with some automation.
