I can't believe I forgot to review you guys. I feel guilty 🙃 Welp, better late than never!
First off, their consome is unique. I can taste that tomato in there and a special seasoning. Since I know how Stacks does theirs I wanted to see how these guys changed it. I prefer Casa Rosita's because they don't have a lot of grease on their consome.
Second, their Birria Tacos are hard swallow... better. Yes, it's hard for me to say it but here's the thing. They don't overdo it. They keep the taco nice and simple and they know how to balance their ingredients, most importantly the cheese. I've gotten too much cheese at Stacks to the point were I could choke no matter how much I chew.
Third, their torta de asada was fire. Fat torta with a decent amount of meat. It's not that special. It was delicious.
Fourth, pricing is a little high but that's just the way it is anywhere I guess.
No stars deducted though. Service was awesome, location is perfect especially at night I love how quiet it is. It is a real good location and I absolutely love the fact that the have a huge parking lot.

The torta ahogada did have unique flavors, it came with carnitas and many interesting toppings. The burrito was huge, but had huge hunks of lettuce, would have been better shredded. A lot of red onions, rice, and beans. My kid forgot to order no onions. That is on us. The chicken taco came on a good sized tortilla & the meat had a good flavor. I tried the habanero salsa, needs a shake, as the spicy pieces fall to the bottom. It needs a little more kick or flavor like lime or salt.? They had the cutest little seating area next to a nursery, by Goodwill on Columbia Center. I will say they were super friendly & welcoming. From the very beginning, Mike was responsive and kind, willing to work with us on our budget, and answered all of my many questions. The event itself was seamless, from set-up, to tear down. They were totally self-sufficient and didn't need any hand-holding during setup, which freed me up to work on the rest of the event setup. All of our guests absolutely loved the food and raved about how perfect it was for our event. The servers were all so friendly, too.
