My Fiancee lives in Boulder, I'm from Cheyenne and were going to go to one of our favorite pizzerias in Boulder Friday evening and upon arrival, we found out they were closed due to an unexpected flooding issue, which serendipitously caused us to discover Proto's Pizza via a Google search. We are both so glad we did! The aroma coming from the restaurant in the parking lot immediately piqued my taste buds, and I was not to be disappointed! Our waitress (I feel badly I can't recall her name) was very sweet and was kind enough to let us sample 2 white wines we were contemplating as she said she didn't want us to be disappointed since we were purchasing a bottle. We both very much appreciated her thoughtful consideration, and she was outstanding the rest of our evening. The Chardonnay we ended up getting was excellent! We ordered the Friday special clam & garlic pizza, and added fresh basil and mushrooms along with a Caesar Salad. The salad was excellent, especially the dressing/quality/freshness of the Romaine & the Peppadew cheese (our only very small complaint was there wasn't quite enough dressing for our tastes, but I'm sure next time we could get a little more on the side). The pizza was fabulous! The sauce is exceptional (as both of us like a little bit of spiciness) and tasted very fresh. The crust was extremely tasty, being very thin, bubbly and a bit charred. We had no idea there is a Proto's in Boulder, Longmont etc. and we are excited to try out all of them. Read moreI had a date night with my son and asked what he wanted for dinner. He said pasta, although Proto’s does not have pasta they do serve a really good pizza pie. Our waitress was friendly and did a great job checking on us. We enjoyed the quiet & relaxing evening on the patio. My son ordered Italian cream soda. There were some awesome add-in flavors to chose from, including lavender which I thought sounded awesome but he went with basic vanilla, which he really enjoyed.
Appetizer: Tomato & Mozzarella which was a perfect light appetizer fresh with basil and drizzled with yummy goodness.
Main dish: we shared a medium pizza I asked if we could do 1/2 & 1/2 or what she recommended for a pepperoni lover and for me wanting fresh mozzarella & basil she came up with a concoction of the (Margherita D.O.C.G) accommodating our requests. It was good! So good my son asked to take another pizza home, which we did.
Dessert: we were stuffed but ordered 2 desserts to take home & share. Tiramisu was good, would have been better If I could have ate it immediately #dangit Ice cream cookie sandwich. Although not made in house my son was happy with his sweet treat.
