As with most of the places in LAX, I think this restaurant is a concept provided by the chef(s) and executed by a separate company under license. In this case Michael Voltaggio has leant his “Ink” brand to LAX in the form of his second branch of Ink.Sack, his LA sandwich shop. What is great about this place is that the prices seem to be the same here as outside of the airport - $6.99 for a sandwich. And with most sandwiches, as long as the ingredients are good, it can be assembled in quick order without too much difficulty. The place was quiet when I went and pickup was very quick. A Jose Andres was ordered, one of the cold sandwiches they offer and I was on my way.
On the flight I opened the sandwich and it was still in good condition, despite there being a vinaigrette, it wasn’t soggy and the ham and chorizo married well with the olives and manchego. A good sandwich that went well with the bottle of whatever wine offered on board.

I waited 45 minutes in line, all of the time watching the unorganized, less than professional, untrained staff. It was ridiculous. Then I received my food. I paid over $18 for a ham and cheddar sandwich, when I’d ordered Turkey. There was two very thin slices of meat on the sandwich. They had no water or Diet Coke so I had to settle for reg come.
