After numerous underwhelming experiences with "fine dining" in the Manchester area—often characterized by overhyped concepts and gimmick-laden menus—Evolution stands out as a masterclass in restraint, execution, and hospitality. This restaurant has redefined what upscale dining can and should be, offering a thoughtfully curated experience that focuses on substance over spectacle.
Atmosphere Remarkably, one of the first things that stood out was the seating—some of the most comfortable chairs I’ve encountered in any restaurant, fine dining or otherwise. This attention to detail speaks volumes about Evolution’s commitment to guest comfort and experience. Despite its location on the bustling Elm Street, the ambiance remains tranquil and insulated. Floor-to-ceiling windows offer a touch of city vibrancy without sacrificing serenity. The interior is tastefully modern—low-lit, inviting, and intimate—making it an ideal setting for both a romantic evening or a relaxed upscale meal.
Service Service was impeccable. Our server was warm, attentive, and consistently ensured that our needs were met without being intrusive. Courses were timed with precision, and drink refills were handled proactively. It’s rare to see this level of professionalism paired with such genuine friendliness. A clear 11/10.
Plating & Presentation The visual presentation at Evolution is an extension of the kitchen’s philosophy: refined, deliberate, and elegant. Every dish arrived immaculately plated, with each element clearly and purposefully arranged. There’s a precision to the plating that elevates the dining experience without ever feeling fussy or overdesigned. It was clear that presentation was not an afterthought—it was part of each dish served. This attention to visual detail enhanced not only the aesthetic but also the anticipation and appreciation of each bite.
Appetizers The appetizers exceeded expectations. The calamari, though a familiar choice, was elevated through refined breading, thoughtfully selected garnishes, and an aioli that balanced richness and acidity perfectly. We also shared a beef rib, which was fall-apart tender and bursting with flavor—no knife required. In hindsight, we regretted not ordering more of it.
Entrées I opted for the sea bass, served with an arugula salad and a tigre sauce. The fish was seasoned delicately, allowing the freshness and natural flavor to shine. The tigre sauce added a subtle heat that enhanced without overpowering. Balanced, elegant, and generously portioned.
We also shared the 8-hour mashed potatoes, a dish that demands its own spotlight. Deceptively simple, the potatoes delivered astonishing richness and a depth of flavor usually reserved for more indulgent ingredients. Silky, creamy, and full of umami, they are a must-order.
Drinks As a bourbon enthusiast, I often gauge a restaurant’s bar program by their execution of classic cocktails. Evolution delivered flawlessly. Their Old Fashioned, Boulevardier, and Manhattan were all executed true to tradition, showcasing both restraint and expertise. The use of Old Forester Single Barrel brought added complexity that was thoughtfully amplified by the preparation.
Dessert I rarely order dessert, but the experience had been so exceptional that we couldn’t resist. We chose the cheesecake, and it was an ideal conclusion to the meal. Flavorful yet not overly sweet, with a velvety texture and perfectly balanced berry compote—an elegant and satisfying finish.
Final Thoughts Evolution is a standout in Manchester’s dining scene. I clearly stated in the reservation it was a special occasion. They sat us at the first table by the front door. Which i thought sucked to begin with but there were not many diners at the time so it was fine. The restaurant had very few diners at the time and we had a reservation so why would they sit a 6 person party next to us on a mostly dead restaurant? Rude?? We waited at least 5-10 minutes before our server offered us water. We got our drinks and ordered all our food at once. We ordered the shrimp cocktail app and my fiance ordered a salad to be brought after the app. The app was meant to be shared. My fiance was almost through his salad before our shrimp cocktail app arrived. The server put it in front of me like i ordered it. We reordered our drinks when the server dropped off the apps. We didnt see our server again until our main meal was done. Meaning , we had nothing to drink during our meal despite our serving taking our meal drinks before our meal was served. He went as far as serving the large table of 6 after we ordered drinks. He delivered their dtinks, and delivered their apps and took their large food order before giving us drinks. I tried to flag him down at this point. He did not see me. When he finally delivered my drink , he forgot my partner also ordered a drink. A simple coke. It was his birthday. Despite this, we were still going to get dessert. The food is good. It took so long to get a dessert menu with no prices and even longer for the server to come back and ask what we wanted for dessert that we just wanted the bill so we could leave. Amazing the server got us our over $200 bill in tecord time . Fastest service of the night was getting the bill. I still gave him a 20% tip despite the poor service he provided. Read moreMy partner and I accompanied friends to a soft opening. Dinner was a preset menu with a protein or vegetarian option. My partner and I picked both options to share. Here’s my take on the experience. The staff was extremely attentive, welcoming and professional from the coat check/hostess to the server, bartenders and the owners. Our waters where barely empty before refilled, our silverware was replaced instantly, as was the wine bottle- I haven’t had service this wonderful in years.
The back room has a whiskey bar that my friends husband was blown way with. The bar was stunning, the wall colors rich, the music wasn’t too loud. And the temperature was perfectly moderate ( I run cold, my partner runs hot so this was a nice touch) lighting was just right, seating was comfortable and tables where beautifully set.
Now on for the food. Everything, and I mean EVERYTHING was amazing. Fish was fresh, seasoning was spot on, filet was perfectly cooked, melt in your mouth. Many of the dishes were not ones I would have chosen, but I’m so so thankful I tried them. I would happily convert to a vegetarian diet if this chef was cooking for me. The beet salad was by far my favorite dish, followed by the cabbage. The flavors were exciting, unexpected and melded beautifully together. The squash purée was so savory and sweet and buttery I would happily sit down with a bowl of that on its own. This was by far the best meal I have had in NH, even better then Otis in Exeter- I’m really excited to try more of the full menu and to see what the chef will create next. Side note, the drinks were delicious as well, and some very fresh takes on some tried and true cocktails.
