For months I've been eagerly awaiting to experience The Tillery and upscale dining in Owings Mills. Recently I finally was able to visit to celebrate a special occasion with my girlfriend.
The restaurant looks fantastic the moment you walk in; the styling and design is truly amazing. With us having a reservation, we were promptly taken to be seated. The hostess provided us a table, however, with it being in close proximity of other patrons we kindly asked to sit at another table. We were told that wouldn't be possible as that was the table pre-assigned to us. After a second request, we were provided another seating option. There were only 3-4 other parties in the entire dining area, so I wasn't understanding why our request took more effort than it should have.
While patiently waiting for our server to arrive, a table was seated after us and then received service. Meanwhile, we were still waiting for our server to even visit our table for the very first time.
Once our server finally arrived, my girlfriend and I both ordered an alcoholic drink. 10-15 minutes later, the drinks finally arrived. As I mentioned earlier, the restaurant was not busy so we were surprised it took so long to receive our drinks. We then proceeded to order the Wedge Salad. That came out relatively prompt so we then ordered our entrées. I ordered the Broiled Rockfish and my girlfriend ordered the Roasted Whole Branzino.
After waiting approximately 30-35 minutes our meals were finally brought out. Similar to the wait time on the drinks, we were very shocked it took so long for the meals to be prepared and brought out to us.
I began to eat my Broiled Rockfish and after one bite, I immediately noticed the it was undercooked and still raw in the center. At that time, I alerted the server who then alerted the manager. The manager came to the table and acknowledged the fish was not cooked and told me another would be promptly prepared.
During the wait, the manager offered me a complementary drink. This was a nice offer, however, this second drink took about 15 minutes to receive.
After patiently waiting another 25-30 minutes for the second Broiled Rockfish to be prepared, it was finally brought to the table. This was by no means "prompt" as I was promised. I then proceeded to take my first bite of the new dish and right away noticed this dish was also undercooked and raw in the center.
After waiting another 5 minutes for our server to return to the table, I again alerted her the dish was not cooked. Her response to the issue, "oh man." I kindly asked to speak with the manager yet again. Once he arrived, I informed the manager of the repeated issue and at that time he began dissecting the dish in front of me with my fork. He then apologized for the second time and offered to get me another dish.
At this time, the restaurant was out of chances and I was ready to leave. It was now over 90 minutes after I arrived and I still did not receive a properly cooked entrée. I was not waiting for another meal to be prepared and shouldn't of had to wait as long as I did.
Regardless of the situation, I calmly asked the manger to get me the bill so we could leave. I expected the manager to "make good" on my bill for the unfortunate experience. When he arrived with the bill I was offended that nothing on the bill was adjusted. I was still charged for everything I ordered minus the Rockfish dish. For being a manager, he did not take control of the situation or attempt to offer any compensation to help remedy the experience.
The level of service from everyone I encountered, the hostess, the server, the kitchen, and the manager were nowhere near upscale or premium. I understand mistakes happen, but having a dish come out raw once is bad enough, but twice is unacceptable. Had I not noticed, I could have gotten extremely sick.

My server Alex was very attentive and sweet I was doing some vlogging and she made sure I had everything I needed. The maple sausage was delicious as well. Mimosas were excellent. I then went to the bar to shoot some additional pictures and the bartender was over the top courteous I had more Mimosas I did not get his name but he was a tall African American gentleman with long locs or braids both people were wonderful................Dinner Sunday December 4th at the Tillery restaurant in the new Marriott Hotel started with the mussels in a butter garlic lemon sauce they were very good followed by the Maryland crab bisque which was excellent the portion was generous My entree was the stuffed Rockfish with crab imperial cooked perfectly I added asparagus with a bearnaise sauce. Wait staff was very attentive and pleasant. The food was hot and came out rather quickly I will dine here again I had a drink that was recommended by the Food and Beverage Director the name was Lavender Fields it was excellent. 7 of us went there for brunch following an inurnment. This was the first visit for all of us.
I was impressed by the sleek and modern look of the restaurant. 5 of us arrived early and were seated in a comfortable wait area. We were offered complementary coffee.
A server brought 2 large pots of coffee with 2 small cups of cream, but she only brought 2 coffee cups and 4 spoons. Then, the young woman disappeared for 10 minutes before finally returning so we could ask for additional coffee cups, sugar, and tea, instead of coffee, for one of us. The coffee was excellent though, very smooth and flavorful.
After a short wait, we were moved to our table. As an appetizer, we shared 2 orders of Fried Calamari and everyone agreed they were excellent! One member of our group enjoyed her 3 egg omelet, which came with hash browns. Another member of our group was very pleased with his burger. But 5 of us ordered the $25 crabcake on a brioche bun and only 2 of us were satisfied with our meal.
The 3 of us who were unhappy with our meal, received a crabcake which contained no hint of Old Bay, J.O. Crab Seasoning, or any other kind of seasoning. The crabcakes we were served were bland -- completely tasteless. This was a huge disappointment.
Another problem was the confusion or miscommunications between wait staff and the kitchen. Some of us asked that our sauces be served "on the side," but didn't receive the sauce. Some of us requested bacon on our crabcake sandwich, but we received the bacon separately, on small plates. Not on the sandwich. One person was served the wrong sandwich.
Another problem was that the on-line menu did not match the very limited menu we were handed at the table.
