Without question, this is the top ten worst pizzas I’ve ever had. Here’s what’s wrong: 1) crust was dry, ashy, raw, spongy, burnt and tasted like pitta bread that didn’t finish cooking. 2) oven was too hot which burnt the flour coated crust before it could finish cooking. You won’t find a golden crust here. 3) dough not stretched evenly which caused the crust to puff up too much and push all the toppings to the center. 40% of the pizza was a ring of crust. I can’t even venture into the travesty of the sauce.
Here’s how to take this pizza from “ashy to classy.” 1) ferment the dough at 85% hydration for at least 24 hours. This will give it a flavor profile! 2) salt the dough 3) turn down the oven to 450 or 500 so the dough cooks before burning while still raw 4) dress crust in olive oil before cooking to avoid the crust’s white ashy vibe. 5) teach employees how to stretch pizza dough evenly 6) cook the crust so it produces a golden crunch that holds the integrity the slice together when it’s picked up. This can only be done with proper dough hydration and appropriate cooking temperatures. 7) precook your crust slightly, then add toppings and finish baking.
This was not a one-off occurrence. I walked around and checked out all the pizzas. They all looked like this. My wife and I joked that the pizza is intentionally bad to keep outsiders from coming back to Ned, lol.
The reason why folks make pizza like this is to increase customer turnover. Baking under hydrated dough at high temperatures is the fastest way to get pizza on the table. This pizza is designed to get customers in and out of the restaurant with as little labor from employees as...
Read moreI spent 4th July this year, in the charming town of Nederland, and it was a memorable experience. The community parade was small but spirited, full of hometown pride and cheerful faces. The atmosphere was lively, the air crisp, and the energy contagious : a perfect way to celebrate Independence Day.
After the parade, I was hungry and wandered into Crosscut in search of a quick bite. The staff immediately stood out, every worker I encountered was friendly, polite, and attentive. An elderly lady I pressume wast the manager, was present and hands-on, greeting customers with a warm smile. Without a doubt, the customer service was among the best I’ve received in a long time.
Unfortunately, the pizza told a different story.
I ordered what I hoped would be a satisfying meal, but it turned out to be the worst pizza I’ve ever tasted. The crust, wasn't burnt but was overly bitter, and the sauce was disappointingly bland. It lacked flavor, balance, and even the comfort food appeal one expects from a local pizzeria. Honestly, biting a tomatoe from the groccery directly would be tastier that this sauce. It was a genuine letdown, especially after such a welcoming reception.
Though I can’t recommend the pizza, I still recommend Nederland for its community spirit and festive charm. Just maybe consider other dining options while you're there, because Crosscut won the WORST Pizza...
