Upon my recent visit to George Motz's new hamburger restaurant, "Hamburger America," nestled in the bustling streets of New York, I found myself immersed in an unexpectedly delightful culinary journey. As someone who only recently discovered George Motz's impressive background—from his Food Network shows to his engaging YouTube videos—I was intrigued by what this hamburger connoisseur had to offer.

The first glimpse of the restaurant was through a friend's Instagram story, which showcased an inviting and charming aesthetic. The appeal was instant, prompting me to delve deeper into this spot. Soon after, I and the same friend who introduced me to the place decided to experience it firsthand.

Upon arrival, we were greeted by a queue that stretched out the door, a testament to the restaurant's popularity. However, the staff, particularly a diligent lady managing the line, made the wait bearable with her efficient crowd management and clear communication about wait times. I went here today to see what the hype was about. I saw a YouTube video done by the two Brits (Jolly) , they were traveling around NY tasting various burger joints. I should have known that two Brits trying gushing over "American food" needed to be taken with a grain of salt, which is exactly what my burger did not have. I ordered the Fried Onion Burger (double). I found it strange that my fries arrived well before my burger, I talking about 10-15 minutes earlier, weird, but I went with it, the fries were great. I asked the lovely waitress for s mayo for my fries, she came back promptly with a little container of mayo, which I assume is used for deliveries. Since I was sitting at the counter I got a great view of the prep for the burgers the buns receive a lovely slathering of liquid gold and the get toasted. I saw the gentleman at the flat top making what I believe is the Fried Onion Burger. Saw him put some type of seasoning on the meat, so I know there was some seasoning used. When I received my burger, I had already finished my fries, so I was actually a little full. I was very under whelmed. The beautiful bun was smashed into the meat, creating a soggy mush, it reminded me of White Castle burgers in terms of the texture everything was steamed. To me a smash burger should refer to the meat not the bun. As I bit into the burger, I could not detect any seasoning at all, I bit off a piece of the burger to see if it was seasoned, it was not. I wanted to put one salt and pepper on the burger, but I could not take the bun off because it was "glued" to the burger! Why go through the trouble of toasting the buns, to only be presented with a soggy mess. I couldn't get the two pickles that was served on the side on the the bun. As I stated earlier, I saw the gentleman behind the flat top, right in front of me shaking something on to the burgers, my only thought is that there is very little to no seasoning added to the ground beef prior to cooking. As I was looking around to see if anyone else didn't seem thrilled about their burgers I noticed at the back section of the kitchen there was another gentleman making burgers, now those looked very interesting, the woman received the burgers and put them on top on the buns, the buns were not smashed along with the beef, there was mustard, onions, and pickles added, they looked good, so why can't the Fried Onion burger be prepped the same way? Just smash the beef, onions and cheese, leave the beautifully toasted bun alone. Would I go back there again, no. I'm glad I did go though, the place is beautiful, a throw back 1940's vibe. The wait staff was on point. I only wish the fries didn't come out 15 minutes before my burger and they add mayo on the counter next to the mustard and...
