It was apparent almost immediately that this restaurant is having several staffing and food quality issues. Long time to get anything and a lot of it wasn't very good. We were told that recently most of the kitchen staff left after their contract ended. Drinks took an extremely long time to come out, but tasted ok.
Three of us had the prime rib, which was touted as one of their specialties and it was absolutely awful, totally bland with no flavor or seasoning detectable and was like an old stew. Not cooked properly, or seasoned anywhere remotely close to how a prime rib should be. Even the crust on it had almost no flavor at all, it tasted more like an over cooked roast beef slab. The au jus, was horrible too, it was more thick and creamy and I would call it more of a burgundy sauce or gravy, not good at all. Not remotely close to what au just should look like or what you would get anywhere else in Omaha.
The manager was very polite and we gave him honest feedback, but with prime rib this awful I would recommend pulling it from the menu and not serving until the quality improves. They comped our prime rib dinners and offered free desert and drinks. I felt sorry for the waiter and the manager having such problems and I tried to offer some friendly advice with having some restaurant experience too. On a good note the person the ordered the Trout dinner at our table said it was really good.
Overall, I'd recommend to get some training on how to season and cook a prime rib, all of the key basics have been missed here. Same with the au jus, go back to the basics and learn master that. Nothing else kills a prime rib than an awful sauce on top of it. I would recommend revising some of the menu items, it was apparent in the whole place that none of the tables were eating the Yorkshire pudding either as it wasn't very good, and also the initial relish and cracker wasn't good either. I'd highly recommend starting with some other type of bread or roll instead of trying to pull off something exotic that wasn't good in the old supper club days either. I wish you luck, but many improvements are needed in the kitchen.
Its nice looking inside and was great to have live music, but many of the tables are too close to each other and it makes it tough to get in and out of your tables. If you could have spaced them apart a bit, it would have been a lot nicer. Also, is it really necessary to carve the prime rib tableside? There isn't enough room to do this and its...

I had the pleasure of dining at Nick’s Quorum Restaurant at the Hilton Omaha, and I can confidently say it was an exceptional experience from start to finish. From the moment I arrived, the hospitality and attention to detail were evident in every interaction. Zahira, the Stay Experience Ambassador, went above and beyond to ensure everything about my visit was seamless. Her warmth and professionalism set the tone for the evening. Alexis, the Food and Beverage Manager, was attentive and clearly passionate about delivering top-tier service. Her leadership was reflected in every part of the dining experience, from presentation to staff coordination. Phillip, the restaurant manager, also made a lasting impression with his welcoming demeanor and hands-on approach. It’s clear the team is well-led and works cohesively to create a great environment. A special shout-out to Curtis, our server, whose friendly attitude and knowledge of the menu made the meal even more enjoyable. He anticipated every need without being intrusive – a true professional. Darnell, the bartender, crafted one of the best cocktails I’ve had in a long time. He was engaging, skilled, and clearly takes pride in his craft. Alan, the host, was courteous and efficient, making sure we were seated promptly and comfortably. What made the evening even more special was the personal touch from chef Cynthia, who came out to introduce herself and check on our dining experience. That level of care and connection is rare – and deeply appreciated. The food itself was exquisite – beautifully plated, rich in flavor, and thoughtfully prepared. Every course reflected the quality and creativity you’d expect from a top-tier restaurant. Overall, Nick’s Quorum is a standout not only for its cuisine but for the people who make it truly special. If you’re in Omaha – whether you’re local or staying at the Hilton – don’t miss the chance...
Read moreI really wrestled with reviewing this, because it was an unusual night with a special menu, and as a newer restaurant it was clear they were having problems serving the later guests and were super apologetic about it. That said, there were problems here that weren't just due to kitchen backups.
It took a very long time to get drinks, and drinks we ordered or just requests for more water were forgotten about. We were comped on two glasses of wine without asking which was nice. I could tell the servers were stressed and I don't really hold this against them, but refilling water is pretty basic (I was a server as well!)
The food was very hit and miss. My husband's salmon carpaccio was really great. My Ceasar salad had a great dressing and was served in the original style of being half a piece of Romaine lettuce, but it was on such a small plate that it was impossible to cut the lettuce without it sliding off the plate. The only thing needed to save the dish was a larger plate. Why?
Food-wise the real issues were the mains. My husband's lobster wellington was dry AF, which you don't want in lobster, ever. My prime rib, which is what was delaying things so long, was tasty but not amazing. The Yorkshire pudding served with it was one of the most horrific things I've ever seen in a restaurant and I'm shocked they let it out of the kitchen. Doughy and undercooked on the inside and dry, desiccated and disgusting on the outside. It's an easy dish to make, so it was shocking to me that they even served it.
I liked the idea of the restaurant and I think it has potential but it's clear they overshot on NYE. We didn't even make it to the included party due partially to the slowness and missed out on the sparkling wine that we paid for as part of our prix-fix dinner.
I'm open to giving it another shot if they can get the kinks worked out because there's a lot of potential but our night was a bit...
