Being a family of some vegans and some carnivores and some in-between, we were happy to find something for everyone at this burger place in Pagosa Springs! The black bean patty was delicious. I typically do not like mock meat, my husband loves mock meat and we both liked this patty. The fries were AWESOME. Get the big one, you won't regret it. The wait was a little long, but the restaurant is cute and clean and the food is great, so we didn't mind. 2 things that would make my 4 star review become a 5 star review: 1: offer at least one vegan cheese (pepper jack would be my pick!) 2: missing out on something called "fancy sauce" sucked. Our server told us it was mayo and ketchup based. I would suggest making a vegan version of fancy sauce with vegan mayo. How hard could it be? Pagosa does not have a vegan restaurant, so us vegans LOVE finding places that not only know what vegan means, but who actually give us a meal as delicious as everything else on the menu. Way to go and thanks for a yummy meal! UPDATE: we returned to Sage today (August 2023). Last review was July 2021). I was so happy to see a vegan burger on the menu! It included vegan cheese and vegan mayo. Yay! Did not notice fancy sauce anywhere on the menu, but I may have missed it. The burger was very good no complaints. The fries continue to be awesome. Well done, Sage! 🙌

Definitely one of the better restaurants in Pagosa. The OG and Sweet Heat were filling. On both the chicken was tasty, crust on the stale side and the buns were cold - as you can see in the photo, not warm enough to melt the cheese. The Sweet Heat chicken did have mucho flavor. They were out of sweet potato fries, it's spring break and lots of sweet potato lovin' Texans head to Pagosa! The fries were also a little on the stale side. Usually will do a lemonade/Sprite mix but the lemonade had an off-putting metallic taste so Root beer it was. Will try Sage again, fingers crossed it was an off day and the next visit will have warm, crispy chicken sandwiches and crisp fresh fries!

Stopped in for lunch while we were passing through. Am super glad we did. I ordered the "O.G." chicken sandwich, which was a large, hand-breaded chicken fillet that was perfectly fried. Spouse ordered the green chili fries with bacon... Crispy basic cheese fries, elevated by a smothering layer of delicious (even if mild) green chili, and sprinkled with a generous amount of homemade thick, chunky bacon. The place itself is a little bit echo-y and loud, but not too bad. In warmer weather, I'd bet the outside seating is great. Yet another one of Colorado's amazing little mountain-town surprises.

My friend was hungry for a burger, so he suggested we eat here.

This is how it works. You walk up to the counter. The worker does not greet you. She is young and looks tired and over all this. The menu is on the wall, and you try to decide what you want while the worker stares at you with dead eyes. You and your friend order and the worker barks that she needs a name for the order. You tell her your name.

You pay, then go to sit in the dining room. You wait for quite some time. Occassionally one of the workers walks into the dining room holding a stapled shut paper bag and bellows a name. You get hungrier and hungrier. You wait for quite some time. Finally the so-tired worker bellows your name...

I ordered the Vegan. I didn't realize it comes with vegan mayonnaise on it. I hate all mayonnaise, either vegan or conventional. It wasn't the restaurant's fault that I didn't specify what I didn't want on the burger, so I don't hold the mayonnaise against them. However, both sides of the bun was slathered in the stuff. There was so much of the vegan mayonnaise. I did manage to wipe off most of it with a napkin, but I lost all of my (shredded) lettuce because every piece of it was coated in the condiment. I got rid of the raw onions while I was at it, because there were too many of them.

The vegan patty was very good. It was very thick and did not fall apart the minute I sunk my teeth into it. It was more like a meaty burger than most veggie burgers I've had at restaurants. The flavor was very good too.

The French fries were absolutely 100% fantastic. They were hot and crisp and not overly greasy. They were some of the best fries I've ever had. I recommend them 100%.

Overall I did enjoy eating at Sage, and would do so again now that I know how to customize my order.

We were passing through Pagosa Springs on our way to Santa Fe when we stumbled on this food trailer on our way out of town. The aroma in the air definitely got my attention. They were just about to close up, when the cook yelled out the window that he would go ahead and take us in, so the girl at the window took our order. A man eating at a table outside said to me, "They are getting you in? Oh you are in for a treat! Everything is delicious here." Well, he was absolutely correct. Everything was amazing. The brisket they loaded up on top of the burger was some of the best brisket I have had anywhere. Being from Texas, I make some of the best brisket ever, and this was as good as anything I've had at home, or anywhere around our home state. Definitely worth the stop!!!
