Fine dining this is not. I knew that going in due to pictures of their food and pricing, but this didn't even meet those lowered expectations. After about 5m we were greeted from afar and a table was pointed out to us to sit at. We ordered and got the food very very quickly...before our drinks. Speaking of drinks, we ordered hot sake (BTW you have to get the cheapest in order for it to be hot) and a coke. The coke was never served and forgotten about completely. The music was so loud we couldn't have a conversation at all. The sashimi I ordered was sloppily cut (if you don't know any better, maybe it's passible, but I do know better and I'd fire the sushi chef). We ordered pho, a shredded chicken and a rare steak. We were served a brisket and a steak. So sent back the brisket for the chicken. But the pho wasn't what you would expect, normally they'd give most ingredients on the side and when it's rare steak that gets served on the side too so that you can kind of cook the steak in the broth, keeping it rare. But, no, it came almost all together, with WAY too many noodles, so that the steak was no longer rare when it got to the table.

My partner doesn't like chopsticks, but no silverware was offered so they had to deal.

We weren't checked on, no water was refilled, nothing.

I would not go back there and do...

Having moved out into the "burbs", access to a lot, or good restaurants, can be a challenge. Happy to say that one of those really good ones is Vy - Sushi Bar & Asian Fine Dining. My wife and I went last night and sat at the sushi bar, ordered some sake and wine, then asked the sushi chef to use his judgment on creating a "Love Boat" on the menu. The result was a delicious and fresh presentation of various types of fish and rolls. While I would say that the selection of options for sashimi may be limited vs some other, larger sushi bars, it was more than enough to enjoy a varied sampling and the quality was excellent. The service was good, the people friendly and engaging (server and manager who also stopped by to chat), the sushi chef was helpful and attentive. The server was lax in keeping dirty plates cleared or checking back enough to keep drinks fresh, which is the one area to improve. Would love to see more people there (we arrived at 7:45p) to give confidence of the staying power of the restaurant, but to be fair they have only been operating as a "re-branded" restaurant for a few months. Even though only one experience for this review, I would highly recommend this place. I know that I'll certainly be back - will be a new weekly...

DELICIOUS!!!

Vy is an extension of Pho Vy and is a classier, sit down for a while option. Vy has a banh mi, lunch & dinner menu.

Dinner - we ordered the sweet & sour pork short ribs which came with many veggies, pineapple and rice. It was so flavorful and the portion was a perfect dinner size! We also ordered a beef sticky bun & a beef banh mi sandwich. All was so good and fresh! They had a great drink menu with speciality drinks also. I can't wait to try them!

Prices - affordable! I thought the prices were extremely reasonable especially after seeing the portions

Interior/Exterior - the inside was beautiful and freshly updated. The bar looks amazing and a great place to relax. There's also a fireplace indoors. There is a patio for dining outside around the back! The restaurant has beautiful trees and flowers surrounding it.

Service - amazing! Everyone was so welcoming and friendly. The staff was great about checking up on us and making sure everything was good & glasses were full.

This is my new favorite place to eat in Parker! Great job to the staff, I can't wait...

I guess this restaurant has changed names a few times. It was a bit difficult to find which parking lot we should use. You have to enter from Twenty Mile Road (through Lowe's parking lot) or from Dransfeldt Road. Inside, you were greeted with their bright sushi bar, and a fireplace in the restaurant. As always, I looked at their options before deciding. They had a few that caught my eye, but I missed one thing - most rolls had shrimp tempura. And they had few options for nigiri. The rolls themselves were not that big, much smaller than what we were used to if we ordered something with shrimp tempura. The Albacore Special Roll was actually pretty good. The Bombay Roll was OK - it had a bit too much mayonnaise. The Yellowtail Spicy Roll was not that spicy and prepared a bit different than most. Our appetizers (Crispy Spice Tuna (delicious) and Pork Summer Rolls were delivered with the meal. Service was OK, I got the impression the waiter wanted to be anywhere else. Unfortunately, I do not think we will be making another visit to this restaurant.

We wouldn’t give even a one star today. Update- 5/26/2023: Liam- we returned to celebrate my husbands Jeff’s birthday. We sat for twenty minutes and had several wait staff pass us by. At ten minutes, I let the hostess know, we hadn’t seen any wait staff for drink or food orders. At 20 mins we left. The restaurant was NOT full. There were empty tables and wait staff that were hanging out at the back register. The young blonde with super curly hair completely ignored us. At twenty minutes - we left. We have other sushi restaurants that are happy to serve us. Sure hope you get things tightened up. Very disappointing. We use to love to patronize VY Sushi. We won’t be back until we hear things have turned around. J & E Parker We love VY. Staff are friendly, the food is amazing and drinks are good! Parker needed this badly! The owner is almost always onsite and runs a “tight ship”. We are always pleased with our orders! Oops too late! It’s all gone!
