Netflixs, Chefs Table guided me here. If you haven't watched it, watch it! The owner, Chris Bianco, is the man. Just a solid, real, down to earth, dude. My kinda people. I knew i had to get here and support anything he's doing.
Was told the wait would be 90 minutes on a Thursday at 4:10pm. 37 minutes later, our table was ready. No one answered the phone for reservations, so I assume you can't. They did point out that there is a full bar next door to enjoy while you wait and can bring your drink with you when your seat is ready. Why not make this building part of the restaurant and serve food in there as well? Im sure the alcohol sales dictate this move.
Parking right next to the place is available at $10 for a valet type service, but there is not much room(maybe 20 vehicles max?). Parked in the big parking structure for $15.
Once we received our text that our seat was ready. we were able to bypass the line and were seated abruptly. Thought it was cool that they have the menus already in place, with a glass of water ready for each seat.
Staff was relaxed and on point. No stress anongst the chaos and were professional, yet laxed in a laxed environment. Great vibe.
Then came the basics... pizza. We ordered the Rosa Pizza which was featured in the netflix documentary. Its different, red onion, parmigiano reggiano, rosemary, arizona pistachios. We also ordered the Sonny Boy Pizza, tomato sauce, fresh mozzarella, salami, and olives.
The pizza was special Absolutely amazing.
Rosa was different, yet it was "alchemy." The pistachios create almost a meat texture flavor to the pizza. My jaw was tired from chewing on each slice of this guy, but i couldn't stop eating. We almost sat in silence as we were both chewing and chewing, lol. I felt like i was eating a special bread instead of a pizza.
The Sonny Boy was also amazing but was definitely more pizzaesque. The olives (which is one of the few foods i dont care for) were actually excellent as they also created a meaty nutty flavor/texture that worked ohhh sooo well. The salami was amazing. I'm not sure if i could add extra, but next time, for sure!!!
The dough is light yet strong, and the slight char adds to the flavor and complexity of each slice. Each bite all the way through the process of chewing and then swallowing, you are tasting the quality of each ingredient. It's just a true piece of art. The netflix show starts out with a food critique being told that the best pizza in the world is in Phoenix... i can see why that statement was made. Truly, truly special.
We ordered the flourless cake because at this point we wanted a bite of everything on the menu lol. The cake was amazing and reminded me of a truffle. Creamy, bold choclate flavor with a very light whip cream on the side. Again special.
The ambiance was awesome. Small, and quaint yet does the job. Small bar area with about 8 seats?
I, like you Chris hear 1000 good things and hold onto the one bad. Its what perfectionist do. With that said, Open a larger restaurant and then do it 3 or 4 times in Phoenix. You have something special here, and the world needs it!

Okay, the Phillies and Sedona were the other reasons. Having ordered from Goldbelly, we decided we definitely had to try the Wiseguy pie. We also had the the Caprese. (Mozzarella Salad) let me tell you, the grape tomatoes were sweet, the basil fresh, and that olive oil..OOOOOH THAT OLIVE OIL was nothing that I have ever tasted before (now I know what I am missing!) but that mozz. Simply heaven. The taste, the creamy texture ahhh heavenly. Now, on to the pizza. I live near Philly, Trenton, NJ, and NYC. I am in a tri-state pizza (Italian market) mecca. But when my husband said we are going to AZ for pizza, I was like. AZ??? Then I watched Open Table, and I was like, I love his journey!! Let me tell you, this pizza was tender, not tough and chewy from over kneading, The crust was absolutely perfect. Full of flavor! With every bite, you can taste every ingredient. The staff at the downtown (original) location (and the bar next door) were so nice and accommodating. One of the gentlemen(staff) was from our area. He acknowledged our Phillies gear, and we chatted for few minutes about the news in Philly I-95 collapse. He wasn't too chatty as it was busy but it was nice hearing he was from our area) He suggested the flourless chocolate cake. I was a perfect consistency. I've had flourless cake, and it's mushy and runny. Sometimes bitter. This cake they serve (not sure if it's homemade). It was served with creme fresh and was like eating the center of the creamiest chocolate truffle. It wasn't too sweet or overbearing. The slice was perfect for 2 people to share. We dined as Pane Bianco for lunch the next day. And we were told that our 45-minute was at Pizza Bianco was record time. Some people wait 2 to 4 hours, so be sure to plan accordingly. And if you make it to Pane Bianco, have the market sandwich that is offered on Tuesdays. Sadly, I forgot the name, but it has a fig jam. (And take home a container of rice pudding!) We are already thinking about our next AZ trip. So much to see and do but it will start in Phoenix and a taste of Bianco! Shout out to Marco Bianco!!
