Disappointingly underproofed-- beyond chewy! I've eaten my share of New York bagels and sourdough bagels, in both New York and elsewhere, and these don't pass muster Atomic bagels have a beautiful outer crust, which is very promising, but the density of the actual bagel is beyond reason. Just like any bagel, a sourdough bagel is expected to have a nice chew, but not one like vulcanized rubber. Something's off with either the starter feed or the proofing or the ovens or the bakers themselves. I wonder if their equipment and approach to staffing and business hours allows them to deliver a consistent, quality product.
Oh, and the price is absolutely ridiculous.

Read moreFresh sourdough bagels have finally returned to Port Angeles. Atomic Bagels was delicious! I had the salted plain bagel with sun dried tomato spread. The wife had the everything bagel. The texture was a good balance of firm crust to soft inside. The everything bagel was a bit over salted, but I am sure they are just dialing in their recipes. Highly recommend, but go early on Sundays in case they run out! A line was already forming back to the door...
