Inside of the trailer is spotless! We own a food trailer and I won't eat at ones that look like they haven't been cleaned in weeks. Of course, I look at the health department's rating before I even try a place.
Food is really good and full of flavor. I had the shredded beef enchiladas today (had the nachos at another time when at Rimrock Taphouse).
The guacamole wasn't as chunky as I like, but it was still very good and tasted fresh. I don't like cilantro, so I can't review their pico. The red sauce was good on the burrito and didn't overwhelm the flavor. Their red hot sauce was HOT, but not so much that I couldn't taste anything for the rest of the day. Verde was okay.
Very friendly people. They also hand out a nice to-go package including utensils, napkins and the guacamole was in a huge ramiken, so it was worth the extra cost.
They do have a nice indoor area to eat. I totally get why they are cooking in their trailer though, as it is stupid expensive to set up new equipment in a brick n mortar, along with the costs of remodeling. They can utilize it as a commissary, so can cook a little inside, but not like a full service site. I have heard they plan on moving into the building and move the trailer to another site.

Food (4 star): I had the breakfast burrito and I had read they have great breakfast burritos. It was good… not bad… not great. It was a shoulder shrug.
Service (4 stars): I have to laugh sometimes when I rate service when I have such a limited exposure to it. I walked up to the window. Gave them my food order. Paid. Waited for the buzzer to let me know to pick up my food. Was handed my food and that was all. So they did what they were suppose to do but the 5 star is when I give them props for the above and beyond.

It's affordable, good and approachable in central Oregon where prices can be sky high. Quesa birria with consume gets very close! Verde enchiladas are great for the money (lean towards Verde here). Carne asada is great for the money. If you live in Redmond or are visiting on a budget this is absolutely the spot! And also feel good you are supporting kind people.
