Best quesadilla I’ve ever eaten. It was so delicious that I ate half of it before thinking to take a picture - it does come with four pieces. I usually think of quesadillas as a dish I can easily make at home, but this one is a glorious exception. The cheese was maximum yummy and perfectly melted, with just the right amount of delicious carnitas, all folded up in a light, crispy (but not too crispy) tortilla. It comes with sour cream, super fresh guac, and homemade salsa. I’m a fan of hot salsa (they also have mild), and Imperio’s hot salsa is one more reason to love this food - it’s a little spicier than typical restaurant hot, without missing a bit of flavor. I really shouldn’t be surprised that El Imperio’s quesadilla is tops, because everything I’ve eaten there is great - my other faves are the quesabirrias, the fish tacos, and the pupusas (which come with a really tasty pickled slaw). It’s also conveniently located on the patio of Kobold Brewing, my favorite brewery in town (which also has cocktails, an impressive whiskey menu, NA beer, kombucha, and lots of board games). These folks make it easy to have a fun and delicious evening!

We stopped in at the Vault on a Sunday in the midst of running errands and were blown away by the food here. El Imperio is delicious, and hands down the best Mexican in town. Yeah, I said it. We had the nacho fries with marinated pork and the burria quesadilla. First, the portions are crazy- so come hungry. Second- the meat says it all. Packed with flavor, all the nacho fixings with fries and chips. The Vault was already our fav spot but now, it’s heaven. We’ll be come back for sure!

Have now been here 4 times and I can confidently say this is our new go-to for Mexican food in Redmond. The specials are where it's at! Chile rellenos, fish tacos, and the homemade tortillas are the perfect density and texture. The two folks always working when we go are so friendly and happy to chat or make substitutions for my dairy free partner. The portion sizes, the hot sauce, it's all top notch. Haven't had anything below superb yet. So glad they're at Kobold too, the timing of delicious Mexican while you finish some of the best local brews could not pair up any better. Hope they stay here for the long-run!

My partner and I come here every week and it is our favorite food truck around. Look no further for the best Mexican Food in Central Oregon. They compete with the best including Tacos Pihuamo in Bend. We are from California so I would say we have a sense for superb Mexican food. We almost always get the carnitas burrito but today we mixed it up and shared an order of the Camarones a la Diabla to celebrate a very special occasion. Perfect heat level, generous portion sizes (these guys always hook it up), and the PERFECT RICE AND BEANS are what separate the good from the great. We will be back...
