Best quesadilla I’ve ever eaten. It was so delicious that I ate half of it before thinking to take a picture - it does come with four pieces.
I usually think of quesadillas as a dish I can easily make at home, but this one is a glorious exception. The cheese was maximum yummy and perfectly melted, with just the right amount of delicious carnitas, all folded up in a light, crispy (but not too crispy) tortilla.
It comes with sour cream, super fresh guac, and homemade salsa. I’m a fan of hot salsa (they also have mild), and Imperio’s hot salsa is one more reason to love this food - it’s a little spicier than typical restaurant hot, without missing a bit of flavor.
I really shouldn’t be surprised that El Imperio’s quesadilla is tops, because everything I’ve eaten there is great - my other faves are the quesabirrias, the fish tacos, and the pupusas (which come with a really tasty pickled slaw). Chile rellenos, fish tacos, and the homemade tortillas are the perfect density and texture. The two folks always working when we go are so friendly and happy to chat or make substitutions for my dairy free partner. The portion sizes, the hot sauce, it's all top notch. Haven't had anything below superb yet. So glad they're at Kobold too, the timing of delicious Mexican while you finish some of the best local brews could not pair up any better. Hope they stay here for the long-run!

They compete with the best including Tacos Pihuamo in Bend. We are from California so I would say we have a sense for superb Mexican food. We almost always get the carnitas burrito but today we mixed it up and shared an order of the Camarones a la Diabla to celebrate a very special occasion.
