After what seemed to be years in the works, the all new Adios Fajitas has finally opened in Rockwall as of September 1st. The fast casual restaurant is in the former location of âXtreme Saladsâ in the shopping center with 24 Hour Fitness. When I saw it was opened I hurried over immediately to be there right at 11am so I could experience it.
This is a fast casual restaurant similar in style to a Chipotle, CAVA or Torchyâs. Thatâs where the similarities stop. The quality of food here, as I would soon find, is not just sit down quality: itâs better than that.
Owners Richard and Heather moved to Rockwall a few years back and quickly discovered what locals have known forever: we do not have any TOP end Fajitas here. Yes, we do have some great tex-mex, and I would argue even some great fajitas, but nothing EXCEPTIONAL like you can find in Dallas County. At least not for Fajitas.
Seeing a problem, and an opportunity, the Torres family came up with the idea of Adios Fajitas. This location is the first one. A Rockwall original.
Looking at the place you wouldnât guess or believe itâs an owner operated startup. They obviously have color pallets, a style guide, even 6 LCD screen menus. Everything looks clean, polished, professional. As the co-owner Rachel explained: they have been figuring it out as they went.
By coincidence I found out I was the 94th customer ever, so I got a ceremonial t-shirt. Thanks!
Now the food. Buckle up. A lot of people may be confused with the premise here, because Adios Fajitas is charging fair market price for no compromise, to end fajitas. The catch is they only serve to go: there are no tables, waiters or inside dining. The entire business is designed, or at least this first location is, for you to get your food and eat it somewhere else. Takeout only.
To be fair there is seating at a bar top for 12 or so, but this is a âwaiting areaâ so like legendary local spot Boots Burger, you gotta eat this food at home, in your car, on your boat or at the park.
I paid $40 for a âMediumâ Combination Fajitas. The menu says it serves 1-2, and I would agree, as we split the fajitas and it was plenty for two adults. Depending on your appetite, I could see a single person eating this all.
The beef is notably Texas Wagyu, and the motto of the place is literally âOur meat ainât cheapâ. They mean that literally and figuratively, and the meat indeed is as delicious as you would hope and expect. Rachel explained to me that they donât use marinates or overnight liquid on this meat, as most do, because thatâs a hack restaurants use to increase the flavor and tenderness of low quality beef. Yep, I could taste the difference in my first bite.
Folks this is it. The best fajitas in rockwall county, finally, have arrived. In a to-go box and a plastic bag. LOL. I would have never thought!
The chips and salsa were also superb, and I noticed a large collection of Mexican sodas, beers and even frozen margaritas. Somehow they even had a whole merchandise section, which again defies the truth of this being the first restaurant of its kind. They went all out here: and it shows.
While I will certainly say I really wish there was dine in seating, the food was so delicious when I was able to eat it I didnât even care. This place is absolutely awesome.

I had family visit and the topic of fajitas came up. I told them about my experience at AdiĂłs Fajitas and that the beef was Wagyu. The Wagyu peaked their interest, so they convinced me to give it another try (this family of mine!).
So I went all out and ordered the Family size (Wagyu only) with all the sides. Remember, this place ain't cheap.
We picked up the order, got home and started to embrace the experience with an open mind.
Results: The fajitas were awesome this time. As stated before, I may have gotten a bad batch on my 1st visit. Great Job Adios Fajitas.
All the rest stands as before. I recommend looking into a better option on the corn tortillas or suggesting reheating with a damp cloth to soften them up.
One more star on the "food" line item.
First Review: Based on the the reviews, I decided to try this mostly takeout fajita place. I opted for the fajitas for 1-2 persons. Mind you, the cost is $45 for Wagyu fajitas. It comes with rice, beans, salsa, guacamole, chips and tortillas (I asked for a combo of corn / flour).
Fajitas: I'm a fajita connoisseur, so I expected a delicacy since the source was Wagyu beef. 80% of the meat had unchewable tendons. I was truly disappointed. Tortillas: flour ok, corn turned into a hard chip by the time I arrived home. Rice, beans, guacamole: very good Salsa: this warm salsa was my favorite item. I'm only going to visit to order the salsa.

From the very beginning, the communication was impeccableâfast, thorough, flexible, and incredibly helpful. With so many moving parts and vendors involved in planning an event, it was such a relief to work with a team that made catering one of the easiest and most enjoyable parts of the process.
The taste testing was not only generous, but also helped us build a menu that went beyond what we originally imagined. We ended up adding options we didnât even know we wanted until we tasted them!
On the day of the event, everything arrived hot, fresh, and ready to go. The food was fantasticâweâre still hearing compliments about it! People were going back for seconds and even taking food home (always a sign that it was a hit!).
The fajitas were outstanding, the empanadas disappeared within minutes, and the jalapeĂąo ranch was next-level delicious. Every bite was a crowd-pleaser.
