Small and quaint establishment kind of a mom-and-pop setup. Absolutely some of the most amazingly fresh vegetables, fresh noodles and unbelievably feeling. The staff is (Kaya) extremely knowledgeable about their product, especially gluten-free offerings, which is awesome especially when you have someone in your family with celiac. An absolute must check out for anyone with gluten intolerance or celiac. You have got to hit this place up if you live in the area, or you're just simply out driving around wasting time. You will not be let down. I swear the cilantro tasted like it literally just came out of the garden, washed of course lol. I just can't say enough about the friendliness and knowledge of the staff as well as how fresh everything tasted. My wife and I both agreed that the shrimp spring rolls with mango or an absolute must try. The only reason it took at least 10 or so minutes is because this was our first time and we were trying to decide what we wanted!

My wife wanted to point out that the menus they have posted on the wall literally have GF on them telling you which menus are gluten-free, plus the numerous combinations of sauces...

I can see why they get five star reviews. I wanted to try something different, and after going to the international food fair at St Jude's Sunday I wanted to try Vietnamese in the local area. I found this on the map and decided to give it a try. I ended up having one of their bowls with rotisserie chicken, lettuce, a carrot and jicama slaw with their Vietnamese traditional dressing. I was actually astounded at the Quality presented here for only about $15. They gave me a whole chicken breast that was very well cooked and had a nice light spice flavor, crisp lettuce and fresh vegetables. The dressing was just what I was looking for, that light Vietnamese dressing with a hint of fish oil and sugar. All in all a very good meal, I felt like it was healthy but also because they offered so much chicken I felt full and satisfied. The atmosphere is a cute little walk-in place, not a place for big parties or anything, they have enough seating to maybe seat 4 couples. I liked the atmosphere, it seemed clean and it had character. Hands down this is the best Pho in town. It’s fresh, flavorful, clear, and so, so yummy. I’ve never been disappointed with the quality of their food. Their customer service is excellent as well. Admittedly, it’s something I order for delivery, but I’ve been know to make small requests. They call every time and want to make sure I am taken care of. In fact, the last time they called, I spoke to Holly. Her family owns the restaurant. She had a question about my order, and during our conversation I divulged that I was under, the weather. I explained their broth helped me so much. She was super, sweet, and told me she was sending a ginger, lemon tea, along with my order. I told her it wasn’t necessary, but she insisted and told me to heat it up before I drank it. Well, after the soup & her awesome tea, I felt so much better. She’s a very sweet and caring person. Order at the counter when you walk in then take a seat. They're pretty quick & make it as soon as you order, not long to wait for food. I did find a piece of plastic in my bowl, looks like the corner of a plastic bag that holds the spinach/veggies. We ordered the grilled pork & bulgogi banh mi as well as the grilled pork spring rolls and bulgogi bowl with brown rice. The banh mis are generously filled with veg & your choice of meat, the portion is just right. The bulgogi bowl is a bun-less version of the banh mi. The spring rolls, again, a variation of the banh mi wrapped in rice paper. The cucumber limeade and pineapple lemonade are amazing too, very refreshing. You take the juice out of the fridge after paying & hand it to the attendant, they put ice in it & give you a straw. There are some small items for sale off the wall, honey, Sriracha, sweet chili sauce and a few other things. It's a pretty small place so be considerate of the space you take up.

*Edit: Upon my return, the staff has changed the way they approach taking orders. As soon as I requested a veggie sandwich, they asked if I wanted mayo or not and advised everything else was vegetarian/vegan. Although the delicious soup is no longer available due to unpopularity (it is soooooo good, even my 18mo daughter eats it), they gave me a spring roll to make up for last visit. Updated to 5 stars because of their customer service and amazing remaining vegan options. Staff is not knowledgeable of vegan options. I ordered a tofu sandwich and there was some type of white cream sauce on it and then I was told the hot and sour soup was vegan which clearly had shredded chicken inside. Vegan = no animal products! Not sure they understand this. Really hope the staff gets better training as we all know Rockwall doesn’t have many plant-based choices.
